Crock Pot Enchiladas
Serves 6
1 lb Ground Beef, lean
1 (8.5 oz) White Onion, chopped
1 (4 oz can) Chopped Green Chilies
1 (14 oz can) Enchilada Sauce
1 (10-3/4 oz can) Golden Mushroom Soup
1 (10-3/4 oz can) Cheddar Cheese Soup
1 (10-3/4 oz can) Cream of Mushroom Soup
1 (10-3/4 oz can) Cream of Celery Soup
Instructions:
Brown hamburger and chopped onion and pour off grease.
Put all ingredients in crock pot. Mix and cook low 4-6 hours.

Chicken Parmesan
Serves 6
1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped
Instructions:
Preheat the oven to 350ºF
In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.
Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.

Spanish Meatloaf
Serves 6
1-1/2 lb Ground Beef, lean
1 (5.5 oz envelope) Wyler's ''Hearty Beef Stew'' Soup Starter
1 (8 oz bag) Mexican Style Cheddar Cheese, shredded
1 (4 oz can) Diced Green Chili Peppers
1 (14-1/2 oz can) Diced Tomatoes, drained
1 Cup BBQ Sauce (recommended: Kraft Carb Well)
Instructions:
Preheat the oven to 350ºF
In a large bowl add the soup starter, diced green chili peppers, and the diced tomatoes; mix until the liquid is absorbed. Add the ground beef and BBQ sauce and mix thoroughly until well combined.
Place 1/2 of the mixture in a loaf pan, making a well in the meat, top evenly with the cheese and place the remainder of the meat mixture on top to seal.
Bake for 45 minutes; drain any residual fat if necessary.
Place the meatloaf on a warmed serving platter and serve immediately. Serve with mixed vegetables or a salad.

Crab Quiche
Serves 6
1 (8 oz pkg.) Louis Kemp Crab Delights, flaked
3/4 Cup Mexican Style Cheddar Cheese, shredded
1/2 (8 oz pkg.) Cream Cheese, cut into 1/4'' cubes
1/4 Cup Green Onions, sliced
1/2 Tsp Salt
1/2 Tsp Basil
1/2 Cup Heart Healthy Bisquick
1 Cup 1% Milk ''Skim''
1/2 Cup Eggbeaters
3 SecondsNonstick Cooking Spray
Instructions:
Preheat the oven to 350ºF
Mix the crab delights, shredded cheese, cream cheese, onions, salt, and basil in a medium bowl.
Coat a 9-inch pie plate with nonstick cooking spray and spread the crab mixture into the bottom.
Beat the remaining ingredients until smooth. Pour over the crab mixture and bake for about 40-45 minutes.
Serve immediately.

Strawberry Shake
Serves 2
1 Cup Frozen Strawberries, thawed
2 Tbsp Honey
1 Cup Cold 2%Milk
1 Cup Plain Yogurt
2 Tbsp Sugar Substitute (recommended: Splenda)
2 Whole Strawberries, garnish
Instructions:
Puree the strawberries and honey in a blender or food processor. Add milk, sweetener and yogurt; blend until smooth.
Pour into glasses; garnish each with a whole strawberry

Everyone in my family love my roasted pepper potatoes.
1 or 2 slices of seasoned roasted bell peppers.. (you can find jars of these usually by the pickles at the store)
1 large onion, sliced
1 green and red pepper
8-10 red potatoes. cubed
1/2 parsley
1/3 cup olive oil
salt and pepper to taste.
Preheat the oven to 350 degrees.
In a zip lock bag or in a large bowl mix all the ingredients together, make sure you coat everything well. Let stand for 15 minutes. Place the ingredients in a baking dish, even them out and cook them for 45 minutes, check them half way through to see if they are getting tender.
This dish goes well with lemon pepper chicken and corn on the cob.

I think that chicken cutlet parmesan is easy. You have some boneless chicken breasts. You dip them in an egg and milk batter. Then you bread with italian bread crumbs. Then you fry them for a few minutes in olive oil until just slightly brown. Put them on a tray add tomato sauce and top with parmesan and mozzerella. Then you bake for a few minutes until done all the way thru.
You can find some great recipes on the food network website. I've been wanting try asparagus and phyllo dough. It looked really easy. You get some phyllo dough (I might be spelling that wrong, its the dough Baklava is made from) from the frozen aisle at the market. Take a sheet of that brush with butter and sprinkly parmesan cheese. Roll one or two asparagus in the dough. Put on a baking sheet sprinkle more cheese and bake until golden brown.

Well there are some Italian dishes that doesn't include pasta, and there is always steak, smuther it in beer and throw it on the grill with shishcabobs or theres prime rib. There is numerous things you could do. However if I was you....I would have a cook out, make some mixed drinks and invite some of his friends and close family members over. Then make his favorite desert. If no ideas there find the recipie for sex on the beach cake. Tell your husband thanks for his work!!!

My husband is in the Army and everytime he gets deployed or comes back from a TDY, we take him out for Dinner. Too many MRE's and plenty chances to cook at home. So we go out and eat. Easy for you.. If you still want to do something nice... Take him out for dinner and when you guys get home have an array of desserts.. Baked Pies, cakes, Cookies, Brownies all those yummy treats he has been missing. That would be nice and different. I know my husband would like that very much.. He also has a sweet tooth, he loves to eat but dessert is his favorite.. Good Luck and I am happy for you, you are getting him back!!

chicken marsala. (you don't have to serve with pasta. serve it with garlic mashed potatoes or smthg.) i never measure this but i'll try
you will need:
mushrooms (sliced)
butter
olive oil
flour
garlic powder
onion salt
chicken (boneless, skinless breasts or thighs. pound thin with a meat mallet in between waxed paper or plastic wrap)
chicken broth (8 oz can)
marjoram 1 tsp.
marsala wine (or any kind of dry, white) 1/2 cup
saute' some mushrooms in a skillet. (high heat)
remove mushrooms (turn down heat) and add some olive oil and butter to the pan. lightly dredge chicken in flour mixed with garlic powder and onion salt. (like a tsp to a Tbsp of each) saute chicken in oil and butter until golden. remove chicken. deglaze pan with marsala (or other) wine. add chicken broth all at once. add marjoram and reduce*. (by half-3/4) add mushrooms and chicken back into sauce and heat through.
*i usually reduce this until it resembles the consistency of what i think marsala sauce should look like. the reduction concentrates the flavors by cooking off the water in the ingredients. you can also guage when it has been reduced enough by tasting it. if it tastes good, then it's done.

Well, you should definetely make his favorite dish. If you don't know what that is you might want to ask his mom or someone that might know. Then you could search for a recipe online for that particular dish. Then to top it off you could make a homemade dessert, the same way. Set the table really nice, with candles and all to put a romantic tone to it. Good luck.

Barbeque some burgers and have fresh fruit, baked beans and a cold beer. I'm sure he wants to see you more than have the meal, so make it fun and fast. The meal, not necessarily the visit with you... Well, you know what I mean!

My husband is in the Navy and usually it does not matter what you cook. Try to make a good home cooked meal with lots of flavor.
There is a website "epicurious" that is my bible to home cooking...
