I have 3 boxes (not quite sure how that happened) and I would like to use them up. Any recipes that call for this mix other than pancakes?

YES i have a recipe for you!!
FUNNEL CAKE!!!! If you haven't tried it, its really good. If you have tried it you know what i mean!! All yo have to do is:
Mix up some pancake mix, deep fry it in like these little stringy shapes until golden brown, and thats it, you don't have to add ne thing cause the mix is already sweet as it is... as a topping to the funnel cake you can use cherries in a can and add some icing sugar, or just icing sugar.... what ever you like!!!

Mix the pancake flour some Italian seasoning, a little salt and pepper and just enough milk to make it a sticky dough. Drop spoon-fulls in a large pot of boiling water or broth and cook for about 15 min or until the center is done- Add chicken to make chicken and dumplings!

I've seen Rachael Ray use it for the breading for tempura fried vegetables, and also to make vegetable or shrimp fritters. Her fritter recipe calls for:

vegetable or other light-colored oil for frying
2 cups complete pancake mix (the "just add water" kind)
1/2 pound small cooked, peeled, and deveined shrimp, chopped
6 oz. lump crab meat, drained and checked for pieces of shell
3 scallions, chopped
2 teaspoons hot sauce
1 tablespoon Old Bay seasoning
coarse salt

the vegetable variation omits the shrimp, crab, and Old Bay and uses 1 cup shredded carrots, 1 10 oz. box frozen chopped broccoli (defrosted), 1/2 of a red bell pepper, and 2 tablespoons sesame seeds.

Both of these recipes make four servings.

Make sure your kitchen is well-ventilated before you fry, or your house will smell like oil for days! My kitchen isn't well-ventilated, which is why I haven't tried these recipes.

Green Onion Fritters
Recipe courtesy Rachael Ray

Vegetable oil, for frying
1 cup all-in-one pancake mix
1/2 cup water
7 to 8 scallions, cleaned, dried and trimmed of roots, chopped
Pinch cayenne pepper
Salt
Freshly ground black pepper

In a bowl, make the batter by combining the all-in-one pancake mix with the water (the batter will be on the thick side). Add the chopped green onions and season with the cayenne, salt, and pepper. When the oil is ready for frying, drop spoonfuls of the batter into the oil and fry on all sides until golden brown and puffy. This should take no more than 3 to 4 minutes. Remove and drain on the paper towel lined plate. Season with salt while they are still hot.

Spicy O-nuts

Vegetable oil, for frying
1 extra large sweet onion
2 cups complete pancake mix, any brand
1 cup beer
1 teaspoon sweet paprika
1 teaspoon chili powder, 1/3 palm full
1/2 teaspoon ground cayenne pepper, eyeball it, or 1 teaspoon hot sauce
Salt


Heat 1-inch vegetable oil of moderate to medium high heat. If you wish to test the oil, add a 1-inch cube of bread to hot oil. If it turns deep golden brown in color in a count of 40, the oil is ready.
Trim ends of onion and peel. Cut into 3/4-inch slices and separate rings.

Mix together pancake mix and beer, season with paprika, chili powder and cayenne pepper or hot sauce. Batter should be thick. If it gets too thick, add a splash more beer. Working in small batches of 5 to 6 slices, coat rings of onion in batter and fry 4 to 5 minutes, until evenly golden brown. Turn onions over so that both sides get puffed and cooked. Transfer to paper towels to drain. Season o-nuts with salt while hot. Repeat with remaining ingredients. When all the onions are dipped and fried, turn off oil to cool before discarding.

I make fritter out of pancake mix
1 cup mix
1/2 cup water
7 sliced green onions
salt and pepper
cayane pepper
(I like it hot so I had alot of cayane you can adjust it to your taste)

Heat oil in pan about 2 inches or if you have a fryer that would be better. mix all the ingredients together when the oil is hot enough about 375 degrees drop spoonfulls of batter in oil fry till golden brown drain very well. you can serve with a good ranch dressing or eat them by them selves

You can make corn dogs. Just dip the sausage in the batter and deep fry it. Good stuff, seriously!

I have breaded fish with it for frying. The coating came out puffy and sweet and the result was great.
