Houlihan tuscan salad with Chiken. You can also prepare these kind of slads with Bread or shrimp suitably changing the ingrediants. The procedure is same for all salads.

Ingredients
===Salad===
2 (15.5 oz) cans Great nothern beans OR 2 (15 oz) cans cannellini beans, drained, rinsed
2 (10 oz) cans Chunk chicken in water, drained
1/2 cup Pitted kalamata olives, halved
1/4 cup Chopped red onion
4 Leaves green leaf lettuce
===Dressing===
1/4 cup Chopped fresh basil
1/4 cup Olive oil
2 tbsp Fresh lemon juice
1/2 tsp Salt
1/2 tsp Coarse ground black pepper
1 Garlic clove, minced

Preparation
1. In large bowl, combine all salad ingredients except lettuce; stir gently to mix. Cover; regrigerate at leat 1 hour or until chilled.

2. Meanwhile, in small jar with tight-fitting lid, combine all dressing ingredients; shake until well mixed. Cover; refrigerate while salad is chilled.

3. To serve, pour dressing over salad; stir gently to coat. Serve on lettuce-lined plates. If desired, garnish with basil leaves.

To give this salad more lemon flavor, add 2 tsp grated lemon peel to the dressing.
