It is the very outer skin of an orange or lemon. To use it you wash the orange or lemon very well and then you use a fine grater or zester to remove just the very outer skin. You do not want to grate into the white area under the skin.

Only the colored portion of the skin (and not the white pith) is considered the zest. The aromatic oils in citrus zest are what add so much flavor to food. zest is the sharp fruity sparkle that hides underneath the skin of any citrus fruit not just oranges or lemons. According the Pocket Oxford dictionary to which I have just referrde it is the piquancy, stimulating flavour, slice of citrus peel added to give flavour

its basicly the outside of the skin of the lemon orange or lime.
Most cheese graters have multiple sides and it will have a fine grate side thats what you use.
