Recipe for Shepherds Pie

1 1/2 pounds lean ground beef
2 tablespoon butter
1 teaspoon Worcestershire sauce
2 eggs, separated
6 tablespoons butter
8 potatoes, peeled, boiled, and mashed
1 cup finely chopped onion
1 tablespoon ketchup
beef broth
1/2 cup heavy cream
1/4 teaspoon garlic powder
Parmesan cheese
Brown ground beef and sauté onions in 2 tablespoons butter until golden. Mix ground beef with onions, ketchup, Worcestershire sauce, salt, and pepper. Add a few tablespoons of beef broth and cook, covered, over low heat for 15 to 20 minutes, adding more beef broth as necessary to keep moist. Beat egg yolks until light, then in another bowl, beat whites until stiff. Beat the yolks, cream, 6 tablespoons butter, and garlic powder into hot mashed potatoes. Gently fold in beaten egg whites. Put meat mixture into a casserole then top with potato mixture. Sprinkle with Parmesan cheese and bake at 350° until potato topping is puffed and browned, about 25 to 35 minutes.

2 cups cooked chopped meat

2 cups mashed potato, prepared with milk and seasonings as desired

1/8 teaspoon paprika
1 tablespoon butter
PREPARATION:
Combine meat, gravy, and chopped onion; season with salt and pepper to taste. Line the bottom of a buttered baking dish with a layer of half of the seasoned mashed potatoes. Add meat mixture then cover with remaining mashed potatoes. Or, meat and gravy can be put in the baking dish first then topped with all of the mashed potatoes. Dot mashed potato topping with butter, sprinkle with salt, pepper, and paprika, then bake for about 30 minutes at 400°, or until potato topping is browned and the Shepherd's pie is thoroughly heated.

Ingredients
1-1/2 pounds potatoes, peeled
1 pound roast lamb or mutton, minced
3 ounces butter
1 medium onion, peeled and finely chopped
1/2 pint lamb stock (made from drippings of the roast with the fat taken off)
Salt and pepper
1/4 pint (approximately) milk
Instructions
Preheat oven to 180 degrees C/375 degrees F. Fry the onion in 1 ounce of the butter until lightly browned. Stir the onion into the minced meat and season well with salt and pepper. Add the stock until the mince has a soft, moist consistency. Put into an ovenproof dish and leave to form a skin.
Meanwhile, boil and drain the potatoes. Mash them with at least 1 ounce of butter and enough milk to make them creamy. Season them well. Spread the potatoes over the minced meat, roughen the top with a fork, and dot with the remaining butter. Bake for 30 minutes at the top of the oven so the potato is well browned.
Variations
Worcestershire sauce or cayenne pepper can be added for a hotter flavor. The top can be glazed with beaten egg if a crisper top is desired.

Minced Lamb, (for cottage pie use minced beef). Onion. Mushroom ,cut very fine, same with the onions. A dash of worcestershire sauce. Fry off the mince, add the onions and mushrooms,add the worsectershire sauce, not too much mind. Peel and chop your potatoes, not too small pieces as they just boil away to nothing.. Drain when you think they are cooked, and mash using milk and butter. Put the mince etc into your serving dish, spread it nice and even, put the mash on the top, again, nice and even. Grate some cheddar cheese (this is optional) and sprinkle over the top. Place the whole creation into the oven and leave until the cheese or the potatoes have gone golden brown. Serve with gravy and your choice of vegetables and enjoy... Steve

My mom used to make a very simple Shepherds Pie that I LOVED.
You will need: 6 medium potato, can of corn, 1.5 lbs ground beef, seasoning (garlic/onion powder, paprika, salt, pepper etc)
Preheat oven to 350.
Boil potato's.
While they are boiling season and cook some ground beef in a medium saucepan until brown. Remove from heat.
Once the potato's are cooked proceed with mashing them as you would with normal mashed potato's. (A little milk, butter and salt and pepper).
In a casserole dish lay down a layer of the mashed potato's about 1.5 inches thick. Layer some meat and then some corn. Continue this process until you reach the top, make sure your final layer is mashed potato's. Sprinkle the top with paprika.
Heat in the oven for about 15-20 minutes or until mashed potato turn golden.

Make a meatloaf
Top it with Green Beans
Add 1 can mushroom soup, undiluted
Top all with mashed potatoes
Bake at 350 for 1 1/2 hours
Top with cheese and bake for another 20 minutes.
For 40 people you will need 2 full size pans 2 inches deep.

CHICKEN SHEPHERDS PIE
"This a fabulous one-pan meal. Serve with a salad and French bread. Just use left over fried, baked, or grilled chicken. You may substitute your family's favorite vegetable in place of corn. Potatoes and roasted garlic can be done 1 to 2 days ahead. If preference is to use dried spices, then use 1/2 teaspoon each of thyme and rosemary. Use any cheese of your choice."

INGREDIENTS:
8 potatoes
1/4 cup butter
2/3 cup milk
1 medium head roasted garlic
1 pound cooked, shredded chicken breast meat
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh rosemary
1/2 cup red bell pepper, diced
1 cup fresh corn kernels
1 cup shredded Cheddar cheese

DIRECTIONS:
To prepare roasted garlic: Cut head of garlic in half and drizzle with olive oil. Wrap in foil and bake at 400 degrees F (200 degrees C) for 45 minutes.
Reduce oven temperature to 350 degrees F (175 degrees C).
Peel, chop and boil potatoes until tender. Drain, then mash potatoes. Add butter, milk and roasted garlic and mix in. Set aside.
Arrange chicken evenly in the bottom of a casserole dish, then sprinkle with spices, then layer peppers, corn and all but 1/4 cup cheese. Spread mashed potatoes on top, sealing everything in. Sprinkle with remaining cheese.
Bake at 350 degrees F (175 degrees C) for 25 minutes or until brown around edges

a really simple recipe and ideal for crowds. The site listed below lists recipes and you can convert them online for different #s of people (personally, however, I'd use instant mashed potatoes instead of from scratch).

I dont have all the measurements for 40 people but I make mine with ground beef I add a can of cream of mushroom and some worcesture sauce carrots and sometimes sliced green beens. season the beef to your liking and make homemade mashed potatos for the topping b/c instants ones run. Lots of chedder cheese on the top bake until crispy.
