Nigerian Peanut Soup

Ingredients:
4 cups chicken broth
1 -2 jalapeno peppers, seeded and finely chopped, or milder variety of small
green pepper
1/2 cup green bell pepper, chopped
1/2 cup chopped onions
1/2 cup chunky-style peanut butter


Directions:
1 In 1-quart saucepan add broth and chili peppers and bring mixture to a
boil. Stir in bell pepper and onion and return to a boil. Reduce heat to
low, cover, and let simmer until vegetables are tender, about 10 minutes.
2 Reduce heat to lowest possible temperature; add peanut butter and
cook, stirring constantly, until peanut butter is melted and mixture is well
blended.

Nigerian Pepper Soup


You Need:


Spice mixture
Ingredients:


1 tablespoon anise seeds
1 tablespoon coriander seeds
1 tablespoon cumin seeds
1 tablespoon allspice berries
1 tablespoon ground ginger
1 tablespoon fennel seeds
1 tablespoon anise pepper
1 tablespoon dried tamarind pulp
1 tablespoon whole cloves


Method
Mix all the ingredients together in a bowl. Use spice mill or mortar
and pestle to pulverize. Spoon into clean glass jar for storage.


Soup
Ingredients:
1 chicken breast diced into cubes
2 diced onions
3 cloves of garlic finely chopped
4 - 5 (or to taste) hot dried chilli peppers finely chopped
1 tablespoon tamarind pulp
3 tablespoons spice mixture
½ teaspoon grated belacan (dried shrimp paste)
1 bunch of rocket leaves
1 bunch of beetroot leaves
1 bunch of bok choy
¼ cup chopped mint
nasturtium flowers (for garnish)


Method:

serving bowls. Add handful of lightly chopped rocket, beetroot
leaves, bok choy and mint to each bowl. Garnish with nasturtium
flower.

* 2 c Water
* 1 1/2 sm Dried green chili peppers -finely chopped
* 1/4 c Each diced green bell pepper -and onion
* 3 tb Chunky-style peanut butter

I have a good soup recipe for you. Its an Afircan soup. Fry 1 onion in a little oil. Cut up some boneless lamb or beef and fry it in the oil with the onions. Then add 1 big spoon of tomato puree. Add 1 small spoon of salt, half spoon of black pepper, half spoon of chilli pepper and a little nutmeg. Add some water and then let it simmer for a while. When the meat is cooked, add some chick peas and a handful of rice and add more water. When it is ready add one lemon and some mint and there you have it. Serve it with french bread and salad
