There's about a million different lasange recipes out there and you can have so many different fillings.

However, you can't go wrong with Delia, so go to the below link to see her selection of recipes. 'Cheats lasagne' might be a good place to start!!

the meat sauce - cook chopped onions in a little oil and add whatever herbs or seasoning you like, add mince and brown then add a tin of chopped tomatoes or dolmio sauce. (you can add red wine or an oxo cube for extra flavour if you wish)

always put a layer of pasta on the bottom of the dish to stop the meat burning and sticking (handy for cleaning afterwards) try to use fresh lasagne pasta to make it that bit special - you will honestly taste the difference and this can be bought in most major supermarkets like sainsburys.

White sauce - i can never make my own right so just buy a packet or a jar. the packets are nicer though and make as directed.

layer it up: pasta, meat, white sauce etc etc but dont get your dish to full otherwise it will spew. Finish the top with the rest of the white sauce make sure you get all the edges.

Top with cheese and cook for 40-45 mins at 180degrees. The cheese can be added later if you don't want it to get too brown!

Serve with salad, coleslaw and garlic bread - yum yum yum

AMAZING LASAGNE

Sauce:

1 lb ground beef browned & drained
1 clove garlic
2 lg cans of tomatoes
2 cans tomato paste
1/2 tbsp dry parsley
1 tbsp basil
1.5 tbsp salt


Mix all ingredients & simmer for 1 hour.

Filling:

2 - 12oz containers of cottage cheese
2 eggs, beaten
1 tsp salt
1/2 tsp pepper
2 tbsp fresh parley or 1 tbsp dry parsley
1/2 c grated Parmesan or Romano cheese
1 lb grated Mozzarella cheese

Mix all ingredients together well.

To Assemble:

Layer (in this order):
Noodles, Cheese mixture, Mozzarella Sauce.

LAYER TWICE.

* Top with mozzarella * Bake for 45 minutes at 400 F.

***TIP*** Buy fresh pasta sheets - great!

But you can also use boxed lasagne noodles too. Cook according to directions or use the no-cook lasagne noodles

This serves 4 and is the only recipie i use. 500gms beef, 1 onion chopped fine, 2 carrotts chopped fine, 300grms mushrooms sliced, 1 tablsespoon tomato puree, 1 tin of chopped tomatoes, 2 garlic cloves crushed. 1 pint of bechemal sauce, 8-10 lasagne sheets. pre heat oven to 200oC brown mince in pan then add onion & garlic, drain off any fat. add tomatoes and tomatoe puree stir continuiosly for 5 minutes. Add mushrooms and carrots and transfer half of the mixture to an oven proof dish 12x8ins, cover with a layer of cheese sauce then lasagna. carry on till you end up with a layer of lasagne on top, then top with cheese sauce and parmesan. transfer to the over for 45minutes and enjoy with garlic bread and side salad. Well a pasta roller/machine would help - then you need about 250gms of OO grade flour and 2 eggs, mix this to make the dough, knead well and leave to stand for about 20 mins. Then start feeding it through the machine and making sheets (you need to fold it each time it comes through and run it at least 5 times on each setting (depending on the machine). Leave it to dry in sheets whilst you make the two sauces.

The meat sauce - go for lean mince. Cook onions and garlic in olive oil. Add the meat and brown it off. Then add good tomato sauce (or tinned tomatoes for ease, but drain off the juice to start with). Add in a mix of herbs - oregano, basil and most importantly nutmeg (grated) and season with salt & pepper. Cook for about 15 minutes, then add about 1/2 pt of beef stock (add the rest of the tomato juice, if you used tinned tomatoes). Cook for about another 15-20 minutes - although the longer you cook it the better the flavour. Whilst it cooks you need to make the bechamel sauce - melt butter and add self raising flour, make a thick paste and then gradually (very) add milk. Keep going until you have a thickish white sauce. Season with salt & pepper.

then just create the lasagne - layer of meat sauce, layer of pasta, layer of white sauce and repeat until you run out. Then sprinkle grated cheese all over and cook for about 25minutes. ( if you use dried pasta, then cook for about an extra 10).

I would add a word of encouragement to make your own pasta, it is so easy and very satisfying. All you need is durum wheat semolina (ordinary plain white flour will do, but semolina is best) and eggs (you can substitute water and/or milk for some of the eggs). Make a smooth, elastic dough by thorough kneading, then roll pieces of the dough into thin flat sheets - for lasagne that's all you need. Dust your rolling pin and surface with semolina to prevent sticking. For details follow the link.

Get spaghetti sauce, one, two or thrree jars depending on how many people.

Ground beef (mince) and ground italian sausage- cook it up with onion.

Lazagna pasta. ricotta cheese and morzerella. onions and itlalian herbs.

drain the meat. mix in the sauce. boil the pasta.

cover the bottom of the pan with the meatsauce. then pasta, then ricotta cheese. do this till you reach the top of the dish and then add the mozerella. bake for 30-45 mins in a gas mark 5 oven or 350 degrees and serve with salad and for dessert...

glasses or dessert cups- custard-whipped cream-custard-whipped cream. top with grated choccie and a marcchino cherry and serve. make sure the custard is freash not canned, yum!

Lasagna
Home made classic lasagna my Mother made for special occasions. This dish is great for assembling and freezing for later use


6-8 servings 1½ hours 30 min prep
Change to: servings US Metric
2 tablespoons bacon drippings
1 garlic clove, minced
1 medium onion, chopped
1 lb ground beef, very lean
2 (14 ounce) cans tomatoes
1 (6 ounce) can tomato paste
2 teaspoons oregano
1/8 teaspoon marjoram
1/8 teaspoon thyme
1/8 teaspoon basil
1 tablespoon worcestershire sauce
1 (1 lb) package lasagna noodles
1 small curd cottage cheese
1 teaspoon parsley
parmesan cheese
1 lb grated mozzarella cheese

Preheat oven to 375 degrees Fahrenheit.
Cook garlic and onions in bacon drippings; add beef. Cook until beef is done.
Add tomatoes, breaking them up as you add them.
Add tomato paste, seasonings and Worcestershire sauce. Cook for one hour.
Boil noodles until done; drain and rinse in cold water; drain well.
In small bowl mix cottage cheese with parsley.
Place some sauce in bottom of lasagna pan.
Layer ingredients as they are listed here until pan is full, or you run out of sauce or noodles; noodles, sauce, cottage cheese, Parmesan cheese, mozarella cheese.
Bake 30 to 35 minutes.
