CHICKEN TETRAZINI
1 lg. stewing chicken, cooked, boned & cubed
1 pt. sour cream
1 lg. can sliced mushrooms
2 cans cream of chicken soup
12 oz. spaghetti
Cook spaghetti broken in pieces but don't cook until tender, just slightly. Combine chicken, sour cream, mushrooms, soup and spaghetti. Put in greased casserole dish. Sprinkle with Parmesan cheese. (I sprinkle crushed bread crumbs on top also, or crushed Fritos.) Bake, uncovered at 300 degrees for 40 minutes.

It's all in the sauce. Start from scratch. Buy plain crushed tomato's (like Renzi), add a small can of tomato sauce, garlic and spices like basil and oregano. Green pepper is optional. Don't forget the healthy olive oil! Add about two tablespoons to your sauce. You can add a carrot or 1 tsp of honey to take the acidity out of the sauce. Cook on low for about an hour. There you have a healthy home made sauce. Better than any other on the market!
Now the noodles... Don't buy commercial dry noodles. Buy fresh noodles. Whether it be lasagna, spaghetti or ziti, etc... After that, be creative. You can make many recipes from this by just adding chicken or beef and (any style of noodle) and cheese. Be creative.
This is not so much a recipe for a specific dish, but the backbone for all pasta dishes. People will be amazed how delicious it is, because it's home made all the way. Commercial sauces just don't make a good pasta dish. Homemade is so much healthier with no corn syrup or MSG. Bon appetite!

YUMMY STUFFED SHELLS
1/2 Box Jumbo Shells
1 container ricotta cheese
1/2 cup parmesan cheese
2 cups mozzarella cheese, divided
2 eggs
1 jar sauce unless you have your own homemade sauce
Preheat oven to 350.
Cook shells according to package directions
While shells are cooking, mix together ricotta, parmesan, 1 cup of mozzarella and the eggs until well blended. Set aside.
Spread some of the sauce on the bottom of a 13 x 9 baking dish, just enough to cover the bottom.
Drain pasta and assemble cooked shells on a cookie sheet.
With a teaspoon, spoon the mixture into the shell until shell is full. You should be able to make at least 10 jumbo shells with the cheese mixture.
Cover stuffed shells with remainder of sauce and the remainder of mozzarella. Sprinkle some oregano on top and bake for about 45 minutes. MMMMMMM and easy to make!
