Hopefully you have a really nice fillet knife - you need one! I could explain it but if you go to the below site it has pic's and explains it at you go along - the pic's show the process - hope it helps. Its not as hard as one might think but it does take a little practice to get use too - the bigger the fish the better.

From head to tail with a sharp fillet knife.
If you don't know to fillet a fish, i would recommend that you rather buy fish fillets next time.
