Cheese and Paneer are prepared by splitting milk and pressing the milk solids. The splitting is done using enzymes in the case of cheese and using sourlime in the case of paneer.
Paneer is fresh whereas Cheese is allowed to mature where some micro-organisms also play a part.

for one, cheese is cheese while paneer is cottage cheese, and they're both just yum! :)
paneer is made by adding lemon juice or salt to boiling milk. the paneer separates out almost instantly, (and you have this watery muttar-like liquid left behind, which was once milk) though the quantity of paneer you get per litre of milk isnt really all that much,
about cheese, no idea,

Basically Paneer is fresh cheese which is not matured but for cheese it can be natural or processed as well. When generally cheese is reffered in India it is commonly understood as "Processed" but with cullinary trade it is natural and fresh or matured.
Cheese classification
Fresh
Soft
Medium
Hard
Grana
so I think this should help you place "Paneer" in very specific cat.
