I want to make something that isnt too much preperation to make, and isnt too messy to clean up.

A Taco Salad (use lettuce, diced tomatoes, onions, black beans or refried beans, black olives and cheese) whatever you prefer.
Put in a bowl and add tortilla chips with salsa.
Quick and easy, and not heavy.
OR
poached salmon or other fish with a salad.
light and easy.
Enjoy!

I have just the thing...I made it myself last night for dinner:

one whole chicken
one packet of Lipton Vegtable soup mix
salt
oil

Simply cover the chicken with veggie oil or olive oil and salt on both sides. Then sprinkle the packet of soup mix on both sides. Bake in the oven for 1 hour (depending on the size of the chicken) and turn once after 30 mins.

We could not believe how good this was. I simply made a baked potato for each of us(Just wrap potatoes in alum. foil and bake with chicken)
This is a simple recipe with very little clean up and we had no leftovers!!!!

Boil some pene pasta for 10mins drain and add a jar of tomato pasta sauce. Perfecto. For an easy meat option you could add a tin of tuna
