As a kid I remember they just went back into the cupboard and were perfectly fine. Have they changed the recipes or just being over cautious?

A month ago, I bought 3 bottles of wonderful Gherkin Relish, wonderful green colour, wonderful taste.Never seen them since in my usual shop.

Went to the fridge yesterday and found the last bottle and put in on Cheese on Toast and then read the label, it said "keep in fridge after opening and eat within 3 weeks"

It was never like that in the past.

In Catering college they told us that anything with a lot of sugar like Jams and Preserves and anything with a lot of vinegar like Pickles and Chutneys, kept for ages.

Also you only get mould in Jams and things, if you introduce a foreign object, like butter.

welcome to the Nanny state..... I make my own pickles and james, and have to say that I leave my pickles and preserves in a cool place (in my case I leave them in the garage) to mature, if the temperature is lowered too much then they take longer to mature and can taste of vinegar for longer.....
The only reason that I put a jam ijn the fridge is tif I have made a very soft set one (e.g. a strawberry jam for a scone, I like extremely soft set to allow it to run and dribble with the clotted cream) and then I will put ti in the fridge to help it retain some stiffness!

Probably for the same reason that there is a use by date on bottled water!

Or when they put 'may contain nuts' on packets of nuts!

However, they have probably changed the recipes for cost reasons. Did you know they found some tinned food in Antarctica, ate it and had no ill effects. Yet nowadays tinned food and frozen foods have use by dates on (I do know that if you freeze something for too long it gets freeze burns - it is the principle!)

They don't put so much presevatives in now.

It's the sauces that annoy me, tomato etc. they are too tall for the fridge and I had one explode on opening when I left it in the cupboard.

maybe they use a diffrent ingrediant in them now days!

a few months ago i bought a apricot jam and used a lil and forgot to put it in the fridge and when i next opened the jar there was green mouldy fluff all over the inside of the jar!
ergh!!!!!

I guess a bit of both.

Now we have central heated houses the natural preservatives don't work as well (salt, sugar) and now we are cutting down on the salt and sugar the natural preservatives aren't there.

Chemical content make them epire after a while. In the old days we didnt use chemical preservatives

because their is sugar in them..which if not put in the fridge,mould will start to grow.
