When I see answers here, I wonder how askers can tell good nswers from bad ones. So far you have three answers... and one of them has been confirmed by another replier.
"Carpe noctem" is the right one. The latin word for "night" is "nox". But... to name a noun, you say the nominative and the genitive, so you can know how to make changes to the noun according to the function it'll have in the sentence. So, we say "nox, noctis". By means of the genitive we classify nouns into five groups. The ones ending in -is, as in this case, are said to belong to the second group of nouns.
These nouns form their accussative (the case of the direct object) with the ending -em.
This is the reason "Carpe noctem" is the correct one.

Contrary to the nay-sayer, "Carpe" is a completely acceptable usage, and need not be replaced with "Cape."
Like many words in Latin, the verb is quite versatile and can be used to indicate plucking (as fruit from a tree), learning or comprehending, as well as snatching or seizing.
