The pizza recipe is not on the Channel 4 website and may not be in Gillian's book...

If you can't find Gillian's recipe, try (this one has an optional cheese topping!)...
Take mashed potato and mix with about a third of plain flour. Add a pinch of bicarb and mix into a dough, press into a flattish dish and cover with topping made of sweated onions and garlic. Add chopped - diced mixed peppers, a tablespoon of tomato puree, a tin of tomatoes, cook slowly until thick, add herbs of your choice, spread over base, top with cheese (OPTIONAL!) and bake.
