it depends on the storing methods. and the relative humidity in the last hour before harvest. the less RH the more long lasting the mushroom will be. but this may harm the quality.

Well, if you count the hyphae that persist underground, mushrooms can live virtually indefinitely. but if you are only considering the fruiting bodies of the fungus (the parts that people often call "mushroom"), then hardened polypores will last the longest. Ling zhi (reishi) fall into this category, as do various species of Trametes mushrooms.
