The best way to figure out the degrees of relationships is to consult a Table of Consanguinity. In relation to you, your first cousin is someone you share a common grandparent with. Your second cousin is someone you share a common great-grandparent with. Third cousin is a common great-great-grandparent, and so on.
A Table of Consanguinity will also tell you what things like First Cousin Once Removed are, or other extended relations. Here is a chart I found online by searching for it.

your first cousins are your mom and dad's siblings children. sorta like you immediate cousins, (like your immediate family). 2nd and 3rd cousins move generations outwards. 2nd cousins are your parents 1st cousins. 3rd cousins are your grandparents 1st cousins. and so forth.

First cousins are your parent's brothers and sisters children and second cousins are your parents cousins (your grandparent's brothers and sisters children). Your parent's cousin's children are third cousins and it fans out and gets more confusing from there!

It's caused more questions than answers this one. However my understanding, and plenty of others understandings noted below is :-
Your cousin (Aunt/Uncles kid).
Your Second Cousin (Your cousins kid).
This is going to start me of on another question regarding this.
What is my cousins kid in relation to my children?

What are first cousins?
They are your cousins - ie. If your mom or dad has brothers or sisters - their kids are your first cousins...
If your mom or dad has any first cousins, their first cousins will be your second cousins....
I hope that makes sense.
