It needs to be a totally vegan recipe. (No dairy products) I just can't seem to find one.

I forgot to put that it needs to be low or no sodium. I'm not much of a cook and so am kind of clueless about whether there was animal products in it or not. Sorry. Guess I neeeded to be more specific.

All of the traditional hummus recipes I have seen are completely vegan.

Here is one I like:

2 (15 ounce) cans garbanzo beans (chickpeas)
1/2 cup tahini (sesame seed paste)
6 tablespoons lemon juice
3 cloves garlic, pressed
1 teaspoon ground cumin
salt and pepper, to taste
olive oil (about 1 Tbsp)

Drain beans and reserve the liquid. In a food processor, blend ingredients and 1/4 cup of reserved liquid. Process until the mixture is smooth.
Add more liquid until the desired consistency is reached.
Adjust seasonings, adding more cumin, lemon juice, salt and pepper, as needed.

This is a really simple but tasty Hummus recipe.

1 can (400g) Chick Peas
3 Tbsp Tahini paste (sesame paste)
Juice of 1 Lemon
2 Garlic cloves crushed
Handful of Pinenuts toasted
Olive oil

1. Heat the chickpeas in about 4tbsp water, till warmed through.
2. Place the chickpeas, tahini paste, garlic and lemon juice in a food processor and whizz till smooth.
3 While the processor is still on, slowly add olive oil until you reach the right consistency.
4. Serve garnished with toasted pine nuts.


You can add a little chilli, coriander or use lime juice instead to ring the changes, sometimes I even add a little roasted red pepper flesh to the mix.

1/2 teaspoon soy sauce
1 1/2 teaspoon salt
1 1/2 teaspoon ground cumin
1/8 teaspoon ground coriander
1/2 teaspoon cayenne pepper
1/4 cup cold water, if needed
2 tablespoons minced fresh Italian parsley
***California Pizza Kitchen Checca ***
2 pounds Roma tomatoes, cut into 1/2" dice
1 tablespoon minced garlic
1 tablespoon minced fresh basil
2 teaspoons salt
1/2 cup extra-virgin olive oil


Directions:

Fit a food processor with the steel blade. Process the garlic cloves until finely minced, stopping the processor occasionally to scrape down the sides of the work bowl. Add the beans and pulse the machine a few times to chop them coarsely. Then, with the machine running, puree them while you slowly pour the sesame paste through the feed tube. Still with the motor running, pour the olive oil, lemon juice, and soy sauce through the feed tube, stopping the processor occasionally to scrape down the sides of the bowl. Stop the processor, open the lid, and add the salt, cumin, coriander, and cayenne. Process until thoroughly blended. If the puree seems too thick for dipping or spreading, pulse in the 1/4 to 1/2 cup cold water. Transfer the puree to a bowl, cover with plastic wrap, and refrigerate to chill well before serving.

Preheat the oven to 250ºF.

Put the pita breads in the oven and heat until thoroughly warmed, 6 to 8 minutes.

Carefully remove and cut into wedges. Place the chilled hummus in a serving plate or bowl and arrange the tomato Checca on top. Garnish with the chopped parsley and surround with the pita triangles. Serve immediately.

California Pizza Kitchen Checca

In a mixing bowl, toss together the Checca ingredients, mixing them thoroughly. Cover with plastic wrap an refrigerate until serving time.

Roasted Garlic Hummus Recipe

INGREDIENTS:
1 can chickpeas/garbanzo beans (15 oz.)
2 tablespoons roasted garlic
1/2 tablespoon lemon juice
1 tablespoon olive oil
1/2 teaspoon oregano
PREPARATION:
In a food processor, process beans, garlic, olive oil, lemon juice and oregano until desired consistency. If hummus is too thick, simply add olive oil in small increments(i/2 teaspoon) until desired consistency.

Serve roasted garlic hummus garnished with finely chopped parsley with hot pita bread, pita chips, or veggies. Roasted red pepper hummus goes very well with cubes of warm Italian bread.

Hummus can be prepared in advance up to two days if store in airtight container in the refrigerator. To serve, heat in microwave or on stovetop.

Really? I've never heard of hummus that wasn't vegan. Grind up cooked or canned, strained chickpeas in a food processor. Stream in olive oil and then mix in tahini. Voila.
