The least crowded seasons at Disneyland are fall and winter. This doesn't include the holidays (Veterans Day, Thanksgiving, Christmas, MLK, President's Day, etc.) or the weekends.
The best time in my opinion to visit Disneyland is in October or March. You have nice weather, the crowds are fairly reasonable, and you can have a nice day with not too much hassle. The downside to visiting in the off season is that there is always a possibility your favorite ride will be closed for maintenance or the weather may not be great. But if you are willing to sacrifice some things for the sake of not being crushed by the hordes of people, Disneyland in the off season is wonderful!

The off season is during the school year weekdays. October and November are good months, as are January, February, and March. Christmas Day and the week after are very high traffic, as are the summer months and Spring Break.
The trade-off is that Disney does not do parades or fireworks shows during the off-season weekdays, but only on the weekends.

Late September - mid November and January - late April. Avoid holidays and weekends!
Best days to go are Mondays or Tuesdays.
