Quite honestly there is no "good" midnight snack. I will say this. If you must, stay away from anything with carbs, as your body will not process them while your body is inactive and are therefore more likely to be stored as fat. Go for a light fruit or berry, and maybe even a small package of yogurt(yoplait light). Of course also stay away from sugar, and any other bad substance such as grease, hydrogenated oil and so forth. ~Flip

Milk is best, it has carbs and protein to last the night. And it is supposed to help us sleep. I like to have graham crackers with it.
Cheese and crackers is great, peanut butter and jelly works, sometimes with some Campbell's chicken noodle, if I am really hungry.
My favorite in winter is cocoa and buttered toast.Been know to have some cream of tomatoe and crackers. It has the milk in it.

It is no good to eat in midnight ... but ... who cares when you are hungry and can't sleep! I usually stick to my healthy choice and I don't drink beer / wine / cocktail / coffee, etc. I mostlly have late night big meals when I work till late night with workmates.

Healthy choices
1) warm milk + sesame crackers
2) soy milk / banana / tofu smoothy
3) chamomile tea + a piece of honey toast

Gain weight choices
1) cup noodle / instant noodle + fried egg
2) ham/cheese sandwich or chocolate chips cookies
3) fired rice with whatever available (eggs + ham + sausages + green onion)

Unhealthy choices
1) Pototo chips + smoothy or ice-cream
2) Go out to eat wanton mein alone
3) Go out with friends to eat big midnight meal (deep fried oysters, garlic prawns, steamed goose slice with tofu, etc.)

go with meat, cheese and crackers. You will get the protein to override the carbs as well as some calcium!
