Here's an easy recipe for you for cheese cake :-
Main Ingredients required:-
4 litres full cream milk
1 tablespoon of Semolina (suji)
Sugar according to your taste
2/3 tablespoon of citric acid/vinegar
1 teaspoon of cardamon (Elaichi) powder
2 tablespoons of finely chopped dry fruits
1) Bring the milk to boil . Stir occasionally so that the bottom of the pot does not get burnt.
2) Put citric acid/vinegar to it and make cottage cheese out of it.
3) Drain the water into a sieve and put the cheese at once into a mixing bowl so that some water content is there with the cheese.
4) Add semolina (suji) and start kneading so that it would turn soft or you can use an electric beater to make it into a smooth mixture.
5) Then add some sugar. The taste should be a little more sweeter than exactly what your taste bud allows you to mix.
6) Then put the cardamom (elaichi) powder and , chopped dryfruits.
7) Now take a baking tin ,grease it with 1 teaspoon of ghee.
8) Preheat the electric oven at 250 degree centigrade with the greased tin inside.
9) Take it out and pour the mixture into the tin.
10) Bake it for 40/45 minutes till the surface is little bit brown then turn the temperature to 180 degree centigrade and bake for 30/35 minutes.
11) Bake it till a pricked toothpick comes out clean.
12) Take it out and put it onto a plate.Let it get cold. Cut it into pieces.

Easy Cheeseake:
Ingredients:
1/2 Stick Butter (Unsalted) 1 Package Crackers 3 ounces Cream Cheese 3 Large Eggs 0r 4 Medium 1 Tbs Sugar 1 Cup Sugar 1/4 Tsp Real Vanilla Flavoring Directions:
Crust
Crush 1 package of honey graham crackers and combine with 1 table spoon of sugar and butter.
Fold together until crackers are saturated with butter. Press into a 9" spring form pan.
Bake at 350 degrees F until edges turn brown.
Set to cool.
Batter
In a mixing bowl, beat cream cheese for about 1 minute.
Add 1/4 cup of sugar at a time, beat for 30 seconds.
Add vanilla and beat next 30 seconds. Add eggs slowly - one at a time. Pour batter into prepared curst and place place in the oven.
Bake at 300 degrees F for 40 minutes and turn oven off. Leave in oven for one hour.
Take out and let cool at least 30 minutes.

Cheesecake
Serves 6-8
INGREDIENTS:
1 (8 ounce) package fat-free cream cheese
1 (15 ounce) container part-skim ricotta cheese
1/2 cup fat-free sour cream
3 egg whites
1 tablespoon all-purpose flour
1/2 cup granular sucrolose sweetener (eg. Splendaâ¢)
1 teaspoon vanilla extract
DIRECTIONS:
Preheat the oven to 325ºF (165ºC). Grease a 9 inch pie plate.
In a medium bowl, mix together the cream cheese, ricotta cheese, sour cream and egg whites until smooth. Stir together the flour and sugar substitute; mix into the cheese batter along with vanilla. Pour into the prepared pie plate and smooth the top.
Bake for 60 minutes in the preheated oven, or until the top is nicely browned. Cool completely before slicing and serving.

How about a no-bake version:
No Bake Pineapple Cheesecake
2 - 8 ounce packages cream cheese, softened
1/2 cup sugar
1 - 20 ounce can crushed pineapple, drained
1 - 8 ounce carton whipped topping, thawed
1 - 3 ounce packages ladyfingers
1 pint fresh strawberries, sliced
In a large mixing bowl, beat the cream cheese with the sugar until smooth. Stir in pineapple. Fold in whipped topping.
Place ladyfingers along bottom and up the sides of a 9-inch springform pan. Pour filling into pan.
Cover and refrigerate for 8 hours or overnight. Remove from pan, top with strawberries and serve. Like 10-12 servings.
(NOTE: we determined that ladyfingers were either not very good or soft ones weren't available so you can substitute angel food cake for the base. Maybe even pound cake. Also, as a variation I was thinking you could fold in drained mandarin orange sections of halves )
I also really like these mini ones and so do kids. You can top them with some pie filling (cherry or blueberry or whatever):
INDIVIDUAL CHEESECAKES

1 package Vanilla Wafers
2 (8 ounce) packages cream cheese, softened
3/4 cup sugar
2 eggs
1 teaspoon vanilla
Line a 6 cavity muffin tin with cup cake liners. Place 1 Vanilla Wafer in the bottom of each cup cake liner. Cream together the cream cheese, sugar, eggs and vanilla. Fill cupcake liners 3/4 of the way up. Bake in a 375 degree oven for 15 minutes.
Yield: 6 cakes
Prep Time: 10 minutes
Cooking Time: 15 minutes
Difficulty: Easy
Finally, Paula Deen made these on her show but I haven't had a chance to try them yet. They certainly LOOK yummy though...and easy!
Peanut Butter Cheesecake Minis
Crust:
1 1/2 cups graham cracker crumbs
4 tablespoons sugar
1/4 cup (1/2 stick) butter, melted
12 bite-size peanut butter cups
Filling:
2 (8-ounce) packages cream cheese, at room temperature
1 cup sugar
1/4 cup all-purpose flour
1 teaspoon pure vanilla extract or almond extract
2 eggs
Preheat oven to 350 degrees F. Place a paper cupcake liner in each cup of a standard muffin pan.
To make crust, in a bowl, combine graham cracker crumbs, sugar and melted butter until crumbs are moistened. Press crust into bottom of each muffin cup. Put 1 peanut butter cup into the center of each crust.
Beat cream cheese with a handheld electric mixer until fluffy. Add sugar, flour, and vanilla, beating well. Add eggs, 1 at a time, beating well after each addition. Spoon cream cheese mixture over peanut butter cups and graham cracker crusts. Bake until just set, about 20 minutes. Allow to cool completely before serving.

Carrot N Raisin Cheescake
Ingredients:
1 cup Graham Cracker Crumbs
3 tablespoon Granulated Sugar
3 tablespoon Margarine -- Melted
24 ounces Cream Cheese -- Softened
1/2 cup Granulated Sugar
1/2 cup Unbleached All-Purpose Flour
4 each Large Eggs
1/4 cup Unsweetened Orange Juice
1 cup Finely Shredded Carrot
1/4 cup Raisins
1/2 teaspoon Ground Nutmeg
1/4 teaspoon Ground Ginger
1 tablespoon Unsweetened Orane Juice
1 cup Sifted Powdered Sugar
Instructions:
Combine crumbs, granulated sugar, cinnamon and margarine, press onto bottom of 9-inch springform pan. Bake at 325 degrees F., 10 minutes. Combine 20 ozs cream cheese, granulated sugar and 1/4 c flour, mixing at medium speed on electric mixer until well blended. Blend in eggsand juice. Add combined remainig flour, carrots, raisins, and spices; mix well. Pour over crust. Bake at 450 degrees F., 10 minutes. Reduce oven temperature to 250 degrees F., continue baking for 55 minutes more. Loosen cake from rim of pan; cool before removing rim of pan. Chill. Combine remaining cream cheese and juice, mixing until well blended. Gradually add powdered sugar, mixing until well blended. Spread over top of cheesecake. Garnish with additional raisins and finely shredded carrots, if desired.

2 Tbsp. lemon juice (optional)
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
1 HONEY MAID Graham Pie Crust (6 oz.)
Strawberry halves
Blueberries
Preparation
BEAT cream cheese, sugar and lemon juice in large bowl with electric mixer on medium speed until well blended. Gently stir in 2 cups of the whipped topping.
SPOON into crust.
REFRIGERATE 3 hours or until set. Spread remaining whipped topping over cheesecake. Arrange strawberries and blueberries in rows on top of cheesecake to resemble flag. (Or, arrange fruit in other desired design on top of cheesecake.) Store leftover cheesecake in refrigerator.
