my friend and would like a receipe for hollendaise sauce and also a diane sauce can anyone help please????? it sucks having to buy them pre made in a pack from the supermarket, and they dont taste any where near as good as the real thing, most of them are crap actually.

Hollandaise is tricky to make but so yummy. You need eggs, lemon juice, and water, plus a double boiler and butter. Melt 1/2 cup butter, then heat 1 1/2 T lemon juice.Put three egg yolks in double boiler and whiskuntil they start to thicken. Add one T boiling water then beat in lemon juice. Remove from heat and beat with a wire whisk. Beat constantly while adding melted butter

Hollandaise Sauce
1/2 cup butter
2 egg yolks
1/4 teaspoon salt
2 tablespoons lemon juice
few grains cayenne pepper
PREPARATION:
Melt butter in a double boiler over simmering water (low heat). Beat egg yolks well and add to butter, stirring constantly with a wire whisk or wooden spoon. Gradually add lemon juice. Cook, stirring, until thickened and hot.

Diane sauce
3/4 cup canned tomato sauce
3/4 cup barbeque sauce
3/4 cup heavy cream
1 1/2 tablespoons Worcestershire sauce
2 tablespoons crushed garlic

DIRECTIONS:
In a saucepan, combine the tomato sauce, barbeque sauce, cream, Worcestershire sauce and garlic. Heat over medium-low setting, stirring, until it comes to a simmer. Allow to simmer for 10 minutes but do not let it boil.

Hollandaise can be a pain to get right; I personally avoid making it. Diane (as in Steak Diane) is pretty much butter, worchestershire, and lemon juice. Garlic and/or onion go nicely too.
