There is no general substitute for mushrooms.
In terms of texture, cubed tofu would probably be a good substitute for mushrooms, and, somewhat like mushrooms, tofu would absorb the flavors of your dish. Depending on the recipe, you might want to add a bit more stock, spice, or other flavoring to compensate for the missing mushroom flavor.

I'm an avowed "M" hater... when I go out, I ask whether there are mushrooms in the salad, and if so, I simply ask to have them left off (ditto raw onions, as they give me a migraine and if the restaurant knows that it's a health condition, they're always good about it)
Chinese food is big on mushrooms and when I order, I ask if I can have a bit more broccoli in place of the M's.
If you're okay with the texture, olives might work as a sub .. black olives on pizza or in spaghetti, as an example.
It really kind of depends on what the food is that you're preparing... for me, I don't care for the texture, so if I'm going to replace, it's going to be to add more of something else that's already going into the recipe.

Well it depends on the recipe and what would taste good in it but you could try, olives, diced celery, diced green peppers, diced tomatoes... any veggie really. Nothing else has quite the same taste as mushrooms to make a really close substitute. Just try and experiment with different things that you like, my hubby hates mushrooms and that's what I have to do. Or if I'm making dinner I'll just put mushrooms in my portion... you could suggest that to your mushroom loving loved ones :)

I also hate mushrooms, the one thing that I have found when cooking anything that calls for cream of mushroom soup is that either cream of chicken or cream of celery make great substitutes in casseroles. Hope that gives you some more options!
