GRIND YOUR OWN MEAT!!!!
It sounds simple but if you have access to a meat grinder (if you have a kitchen aid mixer the attachment is easy to find) grinding your hamburger fresh will blow you away.
Use the best quality chuck steak you can get your hands on and grind it.
Make the burgers big 1/2 pound to 3/4 pound. Press them out into nice fat discs about 4" in diameter with a slight dimple in the center. Season with salt and pepper.
VERY Important: make sure that your grill is very clean before grilling (let it heat up for a minute or two then brush off with a wire brush), then rub an oiled paper towel on the grill with tongs right before you put on the burgers.
Screw the USDA cook to medium rare, medium at most.
Take them off of the grill and rest them under loose foil for 5 minutes before serving.

Here's what I used to do when I was cooking for family:
2# good ground beef about 90% lean
1 egg
3/4 c. KC Masterpiece BBQ sauce
½ c fresh diced onion
stale corn or potato chips crushed with rolling pin. Use fresh chips if you have too.
Add ingredients egg, sauce and onion to ground beef and mix thoroughly by hand. Add just enough of the crushed chips to thicken so that patties form easily. Add salt and pepper to taste.
Form 1 inch thick patties and grill s l o w l y over medium heat turning no more than twice. After first turn, baste with BBQ sauce. These burgers will melt in your mouth.

Here is a simple tip that will greatly enhance your BBQ Burger. dice up some onion and dill pickle and add it to your burger with BBQ sauce of choice. Mix together like a meatloaf then divide into burgers. Before pressing meat into patties you can also had a wedge or chunk of cheese to the middle of meat ball and then form into patty. As you BBQ, brush liberally as you flip the burger. Enjoy!

I add ranch dressing to my burgers before making into patties, then top with a smokey cheese. Sometimes i add a chunk of cheese in middle of burgers so they have a surprize. Other times i have added steak sauce and miracle whip, or anyother condiments people like in the patty. Make sure you only flip burger once to keep moist. Let rest to like steak.
