Since Rhubarb is technically a veg I love to stew it in Raspberry Cordial and serve as it or with a dab on yogurt.

Also tomatoes I even sometimes eat them like an apple or diced and boiled with onion garlic and basil to make a delicious sauce for pasta

POTATO!!!
You can bake it, boil it, fry it, smash it, stew it, soup it, cream it, hash brown it, potato bread, potato salad, buy potato flakes and DON'T FORGET POTATO CHIPS.....Eating a raw potato will settle your stomach! It can even be a toy, make a Mr. Potato head. It makes a decorative vine in a glass of water for your kitchen window seal. If you cut a pattern in the potato you can use it to stencil. Potato starch as well, has many uses in & out of the kitchen. If someone pisses you off you could stick one in the jerks tail pipe and watch them try to figure out what's wrong!!! Good for a pay back. It's even a handy weapon. Use it to hit somebody up side the head !!!!
It has got to be the most versatile veggie on the planet, what other vegetable can do all that?

Turnip. Boiled in water and then mashed very well with salt and pepper and a knob of butter. the water can be drained off to make a delicious gravy stock for a roast of your choice.be careful to pick a firm fresh turnip if its soft or to old it will be stringy.

Spinach-olive oil,garlic,onions,cayenne pepper,bread crumbs.

in a deep pan, put a 1/4 cup of olive oil in pan,heat oil,being careful not to burn the oil,add sliced garlic and chopped onions,reduce heat,cover.After washing spinach,remove top from pan,add spinach and recover.Check to look for reduction.Once spinach reduces,remove from heat,add cayenne pepper to taste.Sprinkle bread crumbs and serve.

I love spinach, cooked with boiled water, sraight from the freezer, then season to taste. I can eat a whole pot of it.

...Capsicum is a name for a genus, so it's not just the red bell pepper, it's a variety of different spices and veggies (for example: bell pepper).

Well my favorite is probably bell peppers (hehehe) and i love them in chili. =).

Potatoes, all different kinds! Boiled, fried, waffled, hash browned, oven cooked, chipified...they're incredible really.

well definitely grilled, zucinni,asparagus if i cant grill i like to satay veggies in lemongrass over rice

I like about every veggie (except parsnips and okra) steamed, stir-fried, raw. It doesn't matter to me!:)
