I wanted to make a sandwich, i have these really big yummy kaiser rolls...or any other ideas?

First toast the rolls, mash up the avacado and spread on one of them. A little salt and pepper, then top with a couple strips of crisp bacon. Yum!

I love avocado on Cobb Salad:

Cobb Salad

Difficulty: Easy
Prep Time: 30 minutes
Cook Time: 4 minutes
Yield: 4 servings

3 slices bacon, cut in half
1 ripe avocado, split, pitted, and diced
2 ripe tomatoes, diced
2 hard-cooked eggs, chopped
Kosher salt and freshly ground black pepper
8 cups mesclun greens
2 cups shredded cooked chicken
1/2 cup blue cheese dressing (or ranch is what I usually use)

and although the recipe doesn't call for it, I always have mine with shredded cheddar cheese.

Spread the bacon out on a paper towel on a microwave safe plate. Cover with another piece of paper towel, cook at full power in the microwave for 3 to 4 minutes or until crisp. Cool.

Meanwhile, in a large salad bowl, layer the avocado, tomato, and eggs, seasoning them with salt and pepper, to taste, as you go. Top with the mesclun greens, then scatter the chicken on top. Crumble the bacon over the salad. Bring the salad to the table and toss with the dressing so all the ingredients are evenly mixed together. Serve.

Alternately, I've always seen the salad served with greens on the bottom of the plate and rows of each of the other ingredients with the dressing on the side. I've also had it served with chopped red onions, but I'm not a fan of onions on my salad.

And here's a really yummy avocado recipe that I LOVE :)

Avocado eggrolls
dipping sauce
3-4 teaspoons white vinegar
1 teaspoon balsamic vinegar
1/2 teaspoon tamarind pulp
1/2 cup honey
1 pinch powdered saffron
1/2 cup chopped cashews
2/3 cup fresh cilantro
2 garlic cloves
2 green onions
1 tablespoon granulated sugar
1 teaspoon ground black pepper
1 teaspoon ground cumin
1/4 cup olive oil
egg rolls
1 large avocado, peeled, pitted, & diced
2 tablespoons sun-dried tomatoes packed in oil, chopped
1 tablespoon minced red onions
1/2 teaspoon fresh cilantro, chopped
1 pinch salt
3 egg roll wraps
1 egg, beaten

Stir together vinegars, tamarind, honey, and saffron in a microwave safe bowl, and microwave for 1 minute.
Stir until tamarind is dissolved.
In a blender, Puree tamarind mixture, cashews, 2/3 cup cilantro, garlic, onions, sugar, pepper, and cumin.
Pour mixture into a bowl and stir in oil.
Refrigerate until ready to use.
Gently stir together avocado, tomatoes, onion, 1/2 teaspoon cilantro, and salt.
Distribute filling evenly onto center of each egg roll wrapper.
Position a wrapper so that a corner is pointing toward you; fold the bottom corner up, 1/4 of the way over the filling.
Brush remaining corners and edges of the wrapper with egg, roll up from side to side, fold top corner over all and press to seal.
Repeat with remaining wrappers.
Continue by deep-frying the egg rolls in 375 degree oil for 3-4 minutes, until golden brown.
Drain on brown paper bags.
Slice egg rolls diagonally across middle and serve with prepared dipping sauce!

I love them on club sandwiches. Also on ham and cheese. My mom used to make a delicious salad using tomatoes, avocados, a little onion and an Italian type dressing. She used to use Viva Herbs and spices but I don't even know if they make that anymore.

I adore avacado on a sandwich with some swiss cheese, baby spinach, tomato, cucumber and red onion. Just slice the avacado and layer it on. It's also lovely as part of a salad -- avacado and strawberries with a balsamic vinagrette is suprisingly good with some spinach greens.

Slice up avacados and tomatoes, take some BBQ'd chicken, cut it up into strips, slice up some onions, chop romaine lettuce, put some vinegar onto the rolls. Put the lettuce down first, Then put down the tomatoes and onions, then the chicken and the avacados. Enjoy!

When I was a child my mum used to give me mashed avocado spread over the bread with a pinch of salt. It was so yummy!

And now I do it myself, and also I use it in salads, burritos, and my children like to do avocado dip, they only use mayonnaise and avocado and eat it with crackers.

Just scoop it out of the rind and put some soy sauce or balsamic vinegar on it.

Its yummy just like that.

You can use them on really any sandwhich. I cook bacon, and use muenster cheese and add the sliced avacodo.
