We used to camp a lot before I hurt my back, and I'm happy to share some of the favorites.

First, we used to par boil chicken then put it in marinade in tupperware containers. This way, the meat never got wet in the cooler, and it marinated slowly as it defrosted. On the day you're ready just take it out several hours before cooking and toss it on your fire with a favorite sauce.

Second, we always made deviled eggs and stored them in another tupperware container (mind you these typically disappeared enroute LOL)

Breakfast sandwhiches are easy - bacon, egg, english muffin and cheese. Start by browning the bacon, use a little of that oil to toast your english muffin then do the eggs using a clean tuna can to shape the egg round (topped in the last few minutes with the cheese so it melts). Bring a little spray cooking oil so the egg/cheese releases easily -- you'll have half the campground at your fire (smile)

Of course diced potatoes with ham, onion, olive oil and herbs wrapped in aluminum foil and tossed on the fire for lunch or dinner is always a winner (you can change it up for your tastes and dietary needs)

We went camping nearly every weekend in the summer when I was a kid. My favorite food was "breakfast hash." You need a BIG cast iron skillet, bulk sausage, shredded or cubed potatoes (you can buy them in the refrigerated section of the grocery store), eggs, and onions. Put the sausage in the hot skillet, stirring to break it up. When it renders out a little grease and starts to brown, add the onions and shredded potatoes. Stir it around until the sausage is no longer pink and the potatoes are cooked. Push it to the outside of the pan, leaving an empty space in the center. Lightly beat the eggs, then pour them into the middle. As they start to set up, stir the rest of the ingredients into the eggs. Keep mixing until the eggs are completely cooked. Add salt and pepper to taste. If you like, you can add cubed red or green peppers (with the potatoes) or shredded cheddar cheese (at the end).

hobo wraps are fun and good. A sliced potato among 4 tin foil squares then cut up or sliced onions, carrots or zucchini then a patty of hamburger, salt , pepper and or some BBQ sauce. wrap up very well and cook over coals/fire until done abt 30 minutes.

Hollow out an orange and put a mixture of jiffy quick cake batter which needs only 1 egg and some water all in a ziploc bag, pour into orange and wrap w foil and put near coal or in dutch oven and let bake. Or bake a cherry or apple cobbler in a dutch oven and bake for abt 40 mins....good stuff...chicken kebobs over the fire. Hope this helps.

take ground round and make a pattie out of it, about 1/4 pound. then slice potatoes and carrots on top of it. then you can put some raw onion and the seasonings of your choice, then put it in a tight sealed foil pouch, and put on your bbq pit, cook for 30 minutes for med rare, and you can sdjust the doneness by 6 minute interverals, really good camping meal.
you can also replace the meat with fish, its really up to your imagination.

chili---
ground beef cooked. one can of kidney beans drained,package of chili seasoning,(follow directions on package)chili powder,small onion, green or hot pepper. Mix together and simmer in a cast iron pot over an open flame or on the grill for about 30-45 minutes

Buy a couple "pudgie pie" makers.(I think they have them at WalMart). They're hinged iron sandwich makers with a handle. Spray the inside with Pam, put a slice of bread on each side, and put your fixin's on one side. Then close, latch, and lay on the coals for a few minutes on each side. Watch carefully!
Some of our fave fillings are Mozz & pepperoni, canned chili, with cheese & sliced hot dogs, plain cheese, ham & cheese, and for dessert, your favorite pie filling. Fun, delicious & easy!
