If by any chance you have lobster left over, it can be easily frozen:

- Freeze lobster after it has been cooked and cooled.
- For best results, freeze shelled lobster meat. Place meat in a freezer container and cover with a cold *brine solution. Leave 1 inch (2.5 cm) headspace, seal tightly and label.
- Whole cooked lobster can be frozen by placing it in a freezer container and covering it with a *brine solution. Freeze lobster at 0° F (-18° C) or below.
- Lobsters will keep for 4 to 6 months.

*Brine solution: ¼ cup (50 ML) salt for each 1 quart fresh water.
NOTE: If lobster meat is to be frozen for less than one month, a brine solution is not necessary.

As a former chef to keep it from going rubbery just warm it gently pour of any liquid, unless you make soup, but warm it in the sauce or in the microwave, if you use it in pasta sauce add it when serving just take the chill off of it, do not boil it in sauces, soup or other dishes, as it will go tough. I would defrost if for a day in the frig, open the container and strain off the liquid and them decide how you are going to serve, I like it with pasta, you can buy pre made alfredo sauce in the grocery stores, just warm that and cook your pasta, I prefer long pasta like spaghetti or fettuccine, then as you serve re-warm the sauce with the lobster in it and pour over the pasta, no cheese as it will ruin the sweet taste of the lobster.
