1 oz. Southern Comfort
1 oz. Amaretto
1/2 oz. Sloe Gin
1 dash of Lemon Juice


Pour all ingredients (except for lemon juice) over
ice in a highball glass. Stir, add a dash of lemon
juice, and serve.

From a old cookbook called Edith Adam's 13th Prize Cook Book published
in 1950 (two years before I was even born) in our local Vancouver Sun
newspaper in Vancouver, Canada. It has a recipe for elderberry wine so
that person who wanted to make some elderberries jam, if you have any
leftover here's a nice wine that will tickle your fancy. The wording
is old, but you get the drift. My father use to make this.

MAKE YOUR OWN WINES:


Successful wine making in the home is assured by following rules
carefully.
1. The first rule to follow is that of cleanliness. All utensils and
containers should be sterile. The fruit must be sterlized too. If
this rule is not followed, bacteria, especially those which form
acetic acid, may cause the juice to become vinegar.


2. The second rule is that fermentation must be started quickly,
before other bacteria can get into action. Too little yeast allows
acetic acid bacteria to work, so that enough yeast must be added to
prevent this. Use the dehydrated yeast, two packages to each gallon
of liquid. Soften it in lukewarm water with sugar as directed on
package nad wait until it forms before adding it. The Brewers' Yeast
carried in drug stores has been inactivated, but live Brewers' Yeast
may be obtained from breweries. Use about 8 oz. (1 cup) to a gallon
of liquid.


3. The third rule is to watch that temperature! 60 degrees F. is what
you want. Cool the sterlized juice quickly to 60 degrees F. and add
the yeast at this temperature. the slow cooling of the fruit and
water mass allows acetic acid bacteria to establish themselves.
Fermentatation should take place at this heat too, an important factor
for the best product.


4. Bottle Your wine immediately upon cessation of fermentation to
prevent contamination. Let the wine age for six months for fine
flavor.


To make sparkling wine or beer add a lump of sugar to each bottle and
then cork tightly. this will form the gas, but not enough to "blow."


ELDERBERRY WINE


1 gallon elderberries
1 1/2 gallons boiling water
Pick ripe berries, place in a large kettle and pour water over. Cover
tightly, stand 24 hours. Pour through fine sieve or jelly bag.
Squeeze to extract all juice and measure. to each gallon add:
6 cups sugar
1 pound raisins, chopped
1/2 ounce ginger
8 whole allspice
4 whole cloves


Simmer for 1 hour. Strain, cool quickly and follow directions above
for Make Your Own Wines.

LAYERED SPINACH DIP

---------------------------------------------------------------------------­-----


1 can (13-1/2 oz.) DEL MONTE® Whole Leaf Spinach
1 pkg. (8 oz.) cream cheese, softened
1/2 cup sour cream garlic or chive dip
1/2 cup finely chopped celery
1/2 cup finely chopped red sweet pepper
2 Tbsp. grated Parmesan cheese


Drain spinach; squeeze out excess liquid. Chop spinach. Stir together
cream cheese, dip, celery and sweet pepper in bowl. Divide mixture in
half. Stir spinach into one part and Parmesan cheese into remaining
part.
Spread half of Parmesan mixture into 1-quart bowl or souffle dish
lined with plastic wrap. Spread half of spinach mixture over. Repeat
layers. Cover and chill 2 hours or overnight.
Uncover, invert dish and remove plastic wrap to serve with crackers or
vegetable dippers, if desired.

I make elderberry wine. Begin by rinsing your berries and getting out any leaves or tiny other pieces that aren't berries. Next cover these with water and simmer. When the water starts to boil you want to gently mash the berries and continue to let them simmer until the meat of the berries look nearly translucent. Strain the juice.

Next to every gallon of juice, add about 1-2 pounds of sugar (this sounds like a lot but remember that it needs to be much sweeter than you want it when it's aged as the yeast eats sugar). Also add one black tea bag, and one sliced orange. When the sugar is dissolved let cool while you prep the yeast.

i suggest sparkling wine (champaign) yeast - one heaping tablespoon in warm water. Let this be until your juice/sugar is room temperature. Add the yeast mixture, stir and cover with a heavy towel. Do not touch - within 24 hours you'll hear happy bubbles popping. You want to let the wine work like this for about 3 days until the bubbling slows down (or you can use a carboy which is much easier).

If you don't have a carboy transfer the wine into a clean glass jug with a balloon on top. Keep this in a cool, dry area (I use a picnick cooler) for about a month. When the balloon doesn't keep popping off or breaking from fermentation, you can rack the wine and let it age for at least 6 months.

If your trying to make the first 2 it will take a very long time.Buy them at any Liquor store. The dip is spinach cream cheese and Ranch dressing

INGREDIENTS:
1 package (10 oz size) frozen chopped spinach, thawed and well drained
1 1/2 cup sour cream
1 cup mayonnaise
1 package dry vegetable soup mix
1 can (8 oz size) water chestnuts -- chopped
3 chopped green onion

DIRECTIONS:
Blend all ingredients well. Cover; refrigerate 2 hrs. Stir before serving.
