Campfire Casserole
Ingredients
- 1/2 pound bacon
- 2 pounds potatoes, diced
- 1 medium onion, diced
- 1 teaspoon salt, divided
- 1/2 teaspoon pepper, divided
- 12 large eggs
- 1 1/2 cups (6ounces) Cheddar cheese, shredded (optional)
- ketchup or salsa
- paper towels
1.) Cook bacon in a large skillet until crisp.
2.) Drain bacon on paper towels.
3.) Save 2 teaspoons of bacon drippings in skillet.
4.) Crumble bacon and set aside.
5.) Saute potato, onion, 1/2 teaspoon salt, and 1/4 teaspoon pepper in hot bacon drippings.
6.) Occasionally stir and cook for 20 minutes.
7.) Whisk eggs, remaining 1/2 teaspoon salt, and 1/4 teaspoon pepper together.
8.) Pour mixture over potato in skillet.
9.) Cook over medium heat until eggs set or for 4 minutes (stir if necessary).
10.) Sprinkle in bacon and cheese.
11.) Serve with the salsa or ketchup.
(VEGETARIAN OPTION: Substitute bacon with Bacos or Bacon Bits and garnish with parsley.)
Chicken Stroganoff
- 1 8-ounce package of noodles
- 1 packet of onion soup mix
- 4 tablespoons sour cream (made from dry mix)
- 1 6-ounce can chicken
- 1 small can sliced mushrooms
- water
1.) Bring water to boil.
2.) Add onion soup mix and stir until dissolved.
3.) Add noodles and cook and stir until tender (8-10 minutes).
4.) Drain noodles (try to keep as much onion as possible).
5.) Combine with sour cream, mushrooms, and chicken.
DESERTS
Apple Delight
- 12 large apples
- 4 tablespoons sugar
- 3/4 cup biscuit mix
- 1/2 cup raisins
- 3 tablespoons cinnamon
- aluminum foil
- solid shortening
1.) Core and chop 1 apple in fairly large pieces.
2.) Mix 1 teaspoon sugar, a few raisins, and cinnamon with 1 tablespoon biscuit mix.
3.) Stir into chopped apple.
4.) Wrap in a piece of greased aluminum foil (leave space for steam).
5.) Cook in embers for 30-45 minutes.
No Bake Candies
- 1/2 cup butter or margarine
- 2 cups sugar
- 1/2 cup water
- 2 tablespoons cocoa
- 1/2 cup peanut butter
- 3 cups oatmeal or 1 cup coconut
- wax paper
1.) Mix sugar, butter, water, and cocoa together.
2.) Boil mixture for 30 seconds.
3.) Remove from fire and add peanut butter and oatmeal or coconut.
4.) Drop on wax paper and let harden.

Hobby dinners are always fun and easy, heavy duty foil with a hamburger patty or a thin chicken breast nestled in thin sliced potatoes and cut up veggies like corn, carrots, peas, some salt & pepper and maybe BBQ sauce or wine or beer. Wrap foil tightly and place on hot coals about 12 minutes each side. Hint-use packaged frozen vegiies and put foil dinner together at home. Froze veggies helps keep meat cold. If you want to do it right get a cast iron or aluminium dutch oven and make breakfast, lunch, dinner or dessert. And I mean real food like cassaroles, pies, cakes biscuits, cobblers, roasts. Or take a clean coffee can, spray some oil in it. Line bottom with refrigerated biscuit or crusant dough. Add enough eggs to cover, some sliced ham, maybe thin sliced oinion and some shredded cheese.dig a whole in hot coals and place the can in the hole so that it is NOT sitting on coals and the coals around it are not touching the can but very close. Put some foil over the can and cook about 12 minutes. When egg whites are solid white and yols are starting to get think it's done. Try the dutch oven, you will amaze your campmates.

I have been a Girl Scout leader and Camp Core staff, so I know what you mean when you say EASY! If you don't care for anything we suggest, I recommend checking a few websites dedicated to camping (eg: www.chuckwagondiner.com)

Walking sodas
If you can get hold of peppermint sticks, the kids love these:
one navel orange per person
one peppermint stick per person
Do not peel orange, but roll it a bit firmly on the table to break the pulp cells and release the juice
Cut an X into the orange
break the ends of the peppermint stick if necessary, then stick one end into the orange, and use it as a straw

Mock Tacos:
Ground beef (you can cook it at home)
Taco Seasoning
Can of Tomato soup (not diluted)
Mix above and heat over fire. Serve over Fritos

Friendship Salad
Each girl was to bring one or two pieces of fruit (in the case of grapes, a nice bunch).
At the campsite, all the fruits were cut up and combined, then everyone got a scoop of "friendship"

Ants on a Log
Cut celery stalks into 3" lengths, fill with peanut butter and put a few raisins on top

Pie Irons
If you have or can borrow (friends or from the campgrounds), Pie Irons will cover a multitude of sins .. I mean, meals:
A pie iron is a sandwich maker in two parts. Each half is on a long stick or arm. You can get them at Wal-Mart in the camping section as well.

Butter the insides of each iron
Place one piece of bread on each side
On ONE SIDE ONLY, put in your filling (see below)
Place the 2nd piece of bread on top
Fit the 2nd pie iron in place and snap together
Cook over the fire (small children MUST be monitored)
Fillings:
- sloppy joes
- mozzarella, pizza sauce and cooked ground beef
- chicken and dumplings
- chicken stew
- ham and cheese
- cubes of cheese
- cut-up hot dogs
- any cooked meat and veggies
- cherry, blueberry or apple pie filling
The important thing to remember is that you're toasting a sandwich, just like you make grilled cheese. The filling will be HOT

You can buy this thing called a "hobo pie maker" It's cast iron and it has a long handle with a clasp and it opens up. Basically you put 2 pieces of bread and filling and it makes little pie type things. We do pizza ones every time we go camping. You just spray the maker with pam, then put one piece of bread, spead some pizza sauce, sprinkle with cheese, put some pepperoni and then the other piece of bread. Close the maker and stick it down into the coals of your campfire. Wait about 2 minutes and flip it over. After another 2 minutes, pull it out and check to see if the bread is toasted enough for you. If not, stick it back into the coals for another minute or so. You don't have to make pizza, you can put anything in them... we've done ham & cheese, sloppy joe, canned pie filling works great for dessert ones, too!

I learned this in girl scouts...
Take a hamburger patty and put it in a piece of tin foil. Slice a potato and onion and put them on top of the hamburger patty. Throw in campfire coals and cook about 20 minutes, if I remember correctly. You could make lots of variations to this as well.

Take a hotdog and pierce it with a stick. Dangle it over an open fire until well done. Put on a bun and enjoy.

don't laugh but this was made by me when campin as a kid several yrs ago........ easy simple an was good....... we called it mac an cheese soup.......
put pot over open fire to boil pasta. add salt to taste.... use boxed mac an cheese..... once water comes to boil add mac an boil bout 20 min DO NOT DRAIN. add cheese sauce mix an buteer.. an a dash of milk.... [ we ovewrcooked mac so we couldn't drain it . but this turn out so good. smoked mac an cheese.] yummy!!!!
