Oven Roasted Potatoes

4 servings
Preparation Time: 10 Minutes
Cooking Time: 30 Minutes


1 1/3 pounds (about 4 medium) golden flesh potatoes


2 tablespoons olive oil


2 tablespoons chopped fresh rosemary or 2 teaspoons dried rosemary,
crumbled


4 cloves garlic, minced


1/2 teaspoon salt


1/4 teaspoon pepper


1 medium red bell pepper, seeded and cut into 1 inch squares


Heat oven to 475 degrees. Cut potatoes into 1 1/2-inch cubes.
Measure remaining ingredients except bell pepper into baking sheet
with sides; mix to blend. Add potatoes and bell pepper. Toss to coat.
Arrange in single layer. Bake 30 to 35 minutes until potatoes are
tender and lightly browned, tossing two or three times during baking.

Make Bubble and Squeak. It's a British Dish which uses leftover mash and it's yummy. Your family gets a good compromise here too,because for the mash lovers its still mash but for the roasty fans, theres a bit of grease involved. Basically boil your potatoes as normal (you can even use new potatoes which will please your hubby and leave the skins on to suit yourself!). Once cooked just mash them down as normal (btw a bit of sliced spring onion is a nice addition). At the same time boil up some cabbage. Now in a large skillet add some dripping (or butter if you prefer) Now all you've got to do is combine both the cabbage and potato and throw it in the pan. Reduce the heat and let the whole thing cook for about 15 minutes without stirring, so that it's set solid. When it's golden brown and cooked all the way through, serve it up giving everyone a slice along with some lovely crispy bacon. hmmm (btw the unusual name comes from what happens when you cook it - it bubbles and squeaks!)

Scalloped Potatoes
This is a very easy way to make scalloped potatoes. The soup makes them very tasty too. You can double this recipe.

Ingredients:
4 cups thinly sliced potatoes
1/2 cup thinly sliced onions
1 can (10 oz.) cream of mushroom soup
1/2 cup milk
Salt and pepper
Paprika



Directions:
Layer potatoes and onions in a 1 1/2 quart casserole.


Mix soup, milk, and salt and pepper. Pour over top the potatoes. Sprinkle with paprika.

Cover and bake at 375 degrees F. for about 1 hour to 1 hour 15 minutes, until potatoes are cooked. Remove cover for the last 10 minutes. Makes 4 servings.

I like to cook it a French way,Thinly slice potatoes.Put the slices into a oven proof dish and make them into layers,in between layers add a little fried onion and mushroom,and even some peas if you like as well as some Bree cheese,and if you want you could also have some small diced fried bacon.Then when you have finished all the layers,put some more Bree cheese on top and then put some cream on top.Put in oven for about 50 minutes.Serve with salad.The potato dish is called Tart de flet.It's really yummy.

What are jackets? Whoever is cooking decides. Everyone else shouldn't have a gripe since they are not putting the effort into it.
Boil or fry (in low amount of oil) small squares of papas while covered on med heat. Stir, so as not to stick and to cook all sides. When soft all around, add small can of tomato sauce,2 cans of water, onions and peppers. Simmer for another 10-20 minutes until you have the consistancy you like.

My family calls them Irish Potatoes:

Basically mash, but I boil the potatoes with skins on with an onion, clove of garlic, and/or bit of celery.

Then I add: butter, grated cheese (any kind will do)

And finally I mix in any of the following I happen to have in the fridge at the time:
Cream cheese, bacon bits, sour cream, buttermilk, ranch dressing, whatever the comes to hand really.

I mash it roughly, leaving it lumpy.

The family loves it. It's really filling and I never have leftovers. Also no gravy is required as it's so tasty on it's own!

Mashed potato is definitely the best followed by sauteed, boiled then roast. The worst is a baked potato. The laziest potato there is. incidentally to make mash really fluffy stir in a raw egg but do it quickly before it cooks!

Oven bake large new potatoes, cool scoop out and mash with a small amount of butter, egg yolk salt and pepper. Form into potatoe cakes using flour to coat them and fry in butter. Sprinkle with grated Gruyere cheese and a little double cream and grill. Delicious.

Alternatively, miss out the cheese and cream and grilling part and before forming into potato cakes add butter, cream, chopped parsley, a little horseradish and Worcester sauce and some very finely chopped onion. Form potato cakes and fry in butter. Delicious.

I like mashed potatoes, this recipes is awesome!

Chili Corn Mashed
2 Idaho® Potatoes, peeled and cubed, #80 ct. (22-24 oz.)
2 1/2 oz Unsalted butter
1/2 cup Milk
4 cloves garlic, minced
6 oz. Fresh corn kernels
2 tsp. Pure chile powder
1 tsp. Cilantro, chopped
1 tsp. Honey
Salt to taste
DIRECTIONS:
1.In saucepan, place potatoes with enough water to cover by 2 inches. Bring to boil, reduce heat and simmer 15 - 20 minutes, until tender. Drain thoroughly.
2.Meanwhile, in small skillet, melt butter in milk. Bring to boil; add garlic and corn. Reduce heat and let simmer 3 minutes. Sprinkle in chile powder.
3.Strain mixture, reserving corn separately from liquid. Place cooked potatoes in large mixing bowl.
4.With electric mixer, whip potatoes while drizzling in reserved liquid. When consistency is right, stir in the corn, cilantro and honey.
5.Season with salt.
