The Bible, the Old Testament, the Torah or written Torah, was first written in Hebrew with few chapter of Ezra and Daniel in Aramaic, 1,400 BC. most of it was written between 900 - 400 BC.
The New Testament, the Christian part of the Bible was written in the first century, in Greek, Koine Greek. It was written in Greek because between 300 BC and 300 AD it was the common language.
After the Romain Empire was Christainized , the Bible was translated to Latin, called Vulgate. In the 15th Century Johannes Gutenberg invented movable type, and translated and printed it in 1436. He believed that the Bible should be for the masses, and therefore he chose the Bible to be the first book to publish, before that it was always hand written.

Some think that the Bible was put together at the council of Nicea, however, this is not exactly true. Many of the books of the Bible as we have it now were determined to be part of inspired Scripture, but the canon was not finalized until much later. The different books of the Bible were written by many different hands (some books, like Genesis are believed to have been written by several different authors and then pieced together as Jewish tradition solidified during the Babylonian exile) and the books were written over the course of a few thousand years. A lot of books by a lot of different Christian communities with differing viewpoints were left out, which is unfortunate because we have lost a lot of the early Christian history due to the burning of many of these books.

The Gospels (Mathew, Mark, Luke, and John) were written anywhere between 50-150 yrs after Jesus's death and Resurrection. Paul's letters which comprise the majority of the new testament, were written less than 20 years after the Resurrection.
This time frame makes the Bible the most accurate historical document of that age. The evidence we have that Alexander the Great was even a person pales to the comparison of our proof of the accuracy of these events.

Christian bible, or the Hebrew bible?
For the Christian bible, it was 325 A.D. at the Council of Nicaea, where the nature of Jesus was debated and decided, and where the books that would become the New Testament were chosen. Prior to that, there was no Christian "bible." There were gospels and letters, that had been copied and recopied, from respected members of the church. These later became the books of the New Testament.
While the specific books were not named, the Nicene Creed set the standard for scripture--the effect of which is that the make up of the bible is directly related to the decisions made in 325.

The Bible as a single book didn't exist until the fourth century when Roman Catholic clerics set the list of the different books that compose our modern Bible. Their choice was based on the constant teaching of Christian Tradition.
In other words the base of our modern Bible (and therefore of the Christian faith) is divine Tradition that is to say the oral doctrine of the apostles as it was handed down to their disciples.

my take is that it is supposed to be a collection of journals or diaries (called Books). Dracula was written in a similar way with not quite the same result but was a much better read!
It was written well after the alleged events and as such cannot be deemed as true or accurate even if the events did take place. It would all be chinese whispers

It was written over a long period of time by many different people who saw things from different perspectives.... The Old Testament was probably oral history until it was written down.

I doubt anyone even knows, except maybe for some of the letters in the New Testament, if even that is verified.
