Until you see roots growing out of them they are still good. If the roots are very small you can still use the potatoe and just cut around the root. Potatoes stay good for a long time in most cases.

They will keep for a couple of months if they are firm when you get them. They will cook up fine until they are soft or mushy or have too many roots growing out of them. Keep them in a bowl in a cool dry place.
