My fave! It's such a versatile ingredient that I believe you can add it to just about any Mexican dish and have a winner. The bean stands alone, as is, and you can't really go wrong with whatever you do with it.

Yum, Tostadas, if you don't have the ready made ones, you can take 3 inches of oil in a skillet and put the heat to low-medium (don't want to get spattered). Place a corn tortilla in the center of the already heated oil and press down with a spatula. Flip it over and do the same to the other side, press it down until it seems crisp. Spread the beans on top, and top it off with shredded lettuce, tomato, cheese, and maybe salsa maybe avocado.
You can also do something we call Birotes. Take a bread (preferrably but not necessarily) a big menudo bread (they're called francesitos or birote bread) they look like the bread used at subway but fatter. Take out the inner bread to make room for the beans. Spread beans inside, add cheese and some jalapenos.

MEXICAN BEAN DIP

1 (15 oz.) can refried beans
2 c. sour cream
1 1/4 pkg. taco seasoning
8 oz. picante sauce
1 recipe of guacamole
2 med. tomatoes
1 bunch green onions
8 oz. cheddar cheese
4 oz. black olives
In 9 x 13 inch casserole dish, spread refried beans. Mix sour and taco seasoning, then spread over layer of beans. Continue by layering remaining ingredients. Cheddar cheese should be grated.
This dish can be served cold or portions can be heated in the microwave for a hot (and wonderful) bean dip. Serve with tortilla chips - corn chips.

Chorizo And Refried Bean Nachos Recipe
Ingredients:
36 Toasted Corn Tortilla Chips
2 tablespoons vegetable oil, or more if needed
1/2 pound fresh bulk chorizo, or packaged, with casings removed
1/2 medium onion, finely chopped
2 cups canned refried beans, heated
1 cup guacamole, purchased or homemade
Red salsa, purchased or homemade
Directions:
Prepare the tortilla chips, if using homemade. Then, in a medium nonstick skillet, cook the chorizo over medium heat until brown, 4 to 5 minutes. Add the onion and cook until the onion softens, about 3 minutes.
To assemble, layer the chips equally with beans, chorizo, and guacamole. Put a dollop of salsa on top. Serve warm.

I like bean enchiladas. Get some enchilada sauce and coat the bottom of the pan. Fill tortillas with refried beans and roll up. Coat the top of the tortillas with more sauce and cover with cheese. Bake in oven until cheese is melted and sauce bubbly.

Five-Star Mexican Bean Dip or Casserole
* 1 9-ounce package tortilla chips
* 4 15 1/2-ounce cans pinto beans, rinsed and drained
* 1 15-ounce can whole kernel corn, drained
* 1 14 1/2-ounce can diced tomatoes, drained
* 1 8-ounce can tomato sauce
* 1 envelope taco seasoning
* 8 ounces shredded cheddar cheese
Optional garnishes:
* shredded lettuce
* chopped onion
* sour cream
* salsa
* jalapeno peppers
Preheat oven to 350° F.
Crush tortilla chips and sprinkle into a greased 13x9x2-inch baking dish.
In a large bowl, combine pinto beans, corn, tomatoes, tomato sauce, and taco seasoning. Mix well and pour over tortilla chips. Sprinkle shredded cheese evenly over top. Bake for 25 to 30 minutes. Serve with your choice of optional garnishes (listed above).

Chicken enchildas (boiled and shredded chicken mixed with refried beans and cheese, rolled into flour tortilla, topped with enchilada sauce and baked.

My favortie thing to eat made with beans is Tostadas. I've seen them being made with meat before but i prefer the veggie ones. It's like a flat taco. You get corn tortillas and fry them flat and put beans on it, then whatever you want. I eat it with lettece, tomato, cheese, sour cream, salsa. Very good.

Mexican dip:
1 can of refried beans
1 tub (160z) of sour cream mixed with taco seasoning, place it on top of the beans....top off with your favorite salsa and then added shredded cheese plus anything else you mike like......for example sliced black olives, jalepeno...etc.
