I have been researching cutlery and have determined that there is a wide disparity between knives of quality and those considered serviceable. Wustoff versus Chicago Cutlery as an example.

There are some great knives called Rada. Someone sent one to Emeril Lagasse and he liked them so much he talked about them on his show. Rada also makes the best vegetable peeler I have ever used! The best part is, they won't cost you an arm and a leg! I have only ever seen them at trade shows and places like that, though so they must be sold through independent dealers. Here is their website.

The knives by Ronco are great and you can get 2 sets for the price of 1. And they are totally replacement free.

I bough the cheap store brand knives from Safeway eons ago, and they're still perfectly sharp. They aren't the best or sharpest knives in the first place, but they're sharp enough and they don't go dull.

Wustof and Henckles are considered among the very best knives, but both brands are expensive.
Cold steel is generally your best choice for finest and sharpest blade.
