1 lb ground chuck or sirloin (NOT hamburger, too much fat)
1 egg
1/2 cup seasoned breadcrumbs
1 tablespoon Italian seasoning
1 small onion, diced

Combine all ingredients in a large mixing bowl, and mix well with your hands. Put into loaf pan. Pour over topping (see below), cover with foil and bake at 350 degrees for around an hour.

Topping:

Tomato sauce works well, as does steak sauce. I have also used a simple can of diced tomatoes.

As a variation, after mixing the meat together I put half in the loaf pan, sprinkle with a lot of shredded mozzarella cheese and a can of mushrooms, then put the rest of the meat mixture on top, cover and bake as usual. Stuffed meatloaf, good stuff :)

I can only assume that this is not a joke.

You will need a good blend of ground beef and ground pork. Some people will use ground Veal but I do not eat dead babies.

Alot of stores will sell a mixture in their meat department for meatloaf.

Place your ground meat into a large clean bowl, add 2 raw eggs (to bind), salt, pepper, garlic and any other spices and herbs that you would like. You can add bread crumbs or some stale bread to give it additional flavor as well. You may also add minced sauteed onions or green/red peppers or both. You may also add ketchup as well.

I would add ketchup, eggs, Italian bread crumbs, Parmesan Cheese, salt and pepper.

Mix all that together (Yes, with your hands) form it into a loaf and place it on a baking sheet. You can coat the top with ketchup.

Place the sheet tray into a pre-heated 375 degree oven for about 45 minutes or until done. It should be brown and firm when comes out but not too brown. Be careful and watch it.

This meatloaf was used for many years in a Sports bar in Boca Raton, Florida for many years and sold very well. I have deleted some items from the recipe but they are not that important.

Good Luck and Thanks for the dinner idea.

This is my favorite meatloaf recipe, that we have made for years.

INGREDIENTS:
1 pound ground beef
1/4 cup ketchup
1/2 packet dry onion soup mix
3 slices leftover bread (heels are great), torn into bite-size pieces
1 teaspoon Italian-style seasoning
1 tablespoon water
water as needed

--------------------------------------------------------------------------------

DIRECTIONS:
Preheat oven to 425 degrees F (220 degrees C).
In a large bowl, combine the beef, ketchup, soup mix, bread, Italian-style seasoning and water. Mix well. Shape into a loaf and place into a 9 inch pie pan OR a 9x13 inch baking dish. Baste the top of the meatloaf with ketchup.
Bake at 425 degrees F (220 degrees C) for one hour, or until the edges are just crispy and the top has a crust.
Cool for 15 to 20 minutes before cutting.

Ingredients:
1/2 tsp. freshly ground black pepper
2 c. freshly made bread crumbs
butter (for greasing loaf pan)
1 1/2 tsp. dry mustard
2 lightly beaten eggs
2 lbs. ground beef
3/4 c. milk
1 finely chopped onion
1 1/2 tsp. salt
2 tbsp. Worcestershire sauce

Steps:
1. Preheat oven to 350 degrees F.

2. Butter a loaf pan and set aside.

3. Combine bread crumbs, onion, eggs, beef, Worcestershire sauce, dry mustard, salt, ground pepper and milk in a large bowl. Use your hands to mix the ingredients together well.

4. Pat mixture into the loaf pan and bake 45 minutes.

Tips:
To make bread crumbs, cut the crusts off some white bread, then process in a food processor. That's it. (And they really are much better when you make them, as opposed to buying them in a can.)

For meat loaf with parsley and tomato, omit the Worcestershire sauce and mustard. Instead of milk, add 3/4 c. tomato juice and 1/4 c. minced parsley plus 1/2 tsp. crumbled basil. Cover with 3/4 c. tomato sauce and bake as directed.

If you like cheese in your meat loaf, try omitting the Worcestershire sauce and adding 1/2 c. grated cheese instead.

Bacon tastes great in meat loaf. If you'd like to add it, place four strips of uncooked bacon over the top of the loaf after you've patted it into the pan. Bake as directed.

Meat loaf, as everyone knows, makes fabulous sandwiches the next day.
