Steak Sandwich

1 large strip, round, or shell sirloin steak, weighing between 12 ounces and 1 pound

1/2 t. coarsely ground black pepper

Salt to taste

2-3 T. oil

2 T. chopped onion

4 oz. crimini mushrooms, cleaned and chopped

1/2 t. thyme

1 loaf French or Italian bread, or 1 Vienna loaf

3-4 T. prepared mustard

Trim any excess fat from the steak. Sprinkle both sides with pepper and salt, then brush with a tablespoon of the oil. Heat a cast-iron or nonstick pan and sear the steak about 2 minutes on each side. Remove from the pan. Cook the onion for 2 minutes in the remaining oil, then add the chopped mushrooms, sprinkling them with the thyme and a little salt. Cook, stirring, until they have softened. If the mixture dries out, add a tablespoon or so of water.

Cut a large piece of bread about 1 inch longer than the steak. (If you're using a Vienna loaf, you may not need to cut it at all.) Slice it lengthwise through the middle, leaving an uncut edge as a hinge. Spread both cut sides of the bread liberally with mustard. Now place the steak on the bottom half and scatter the mushroom mixture on top. Fold the top half of the bread down. Wrap the sandwich in two layers of plastic wrap. Take a long piece of string and tie the sandwich up tightly as if it were a parcel, knotting the string in several places. Put the sandwich on a plate and place another plate on top of it. Now weight it down with either cans of food or a bowl filled with water. Leave it for 8 hours or overnight in the refrigerator or other cold place. When you rescue it from the weights, it will be firm and flat. For serving, unwrap it and slice it on the diagonal so you have several strips, each about 3/4 to 1 inch wide. Arrange these on a platter with a bowl of relish or chutney to accompany them.

Pinto Bean Soup

Ingredients:

2 qt.water
1 lb.dried pinto beans, covered with hot water and soaked overnight
2 c.Spanish onion, small dice
1/2 c.fresh cilantro, chopped
1/4 c.fresh oregano, stripped, chopped
1/4 c.fresh parsley, chopped
1 eachjalapeno chili pepper, halved, stem removed, seeds removed optional
2 Tbsp.Spanish paprika
6 oz.tomato paste
1 eachbottle Pilsner beer
1 Tbsp.salt
1/2 tsp.black pepper
1 qt.water
to tastesalt
to tasteblack pepper, ground
1 c.shredded cheddar cheese
1 c.Vidalia onion, diced
1/2 c.cilantro, chopped

Procedure:
Put soaked beans and water into a large soup pot. Add the remaining ingredients, bring to a boil, then simmer for about two hours, or until the beans have softened and partially dissolved.

Soup may be puréed completely or served chunky style; garnish with cheese, diced sweet onion and fresh cilantro.



Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

Sea Food Tagliatelle courtesy of Jamie Oliver

You can put almost anything in. Squid, Prawns, Scallops, Mussels, Tuna, Swordfish etc.

Soak a pinch of saffron in a glass of white wine.
Cook the tagliatelle but not fully - until al dente.
Whilst the Tagliatelle is cooking, Fry one or two cloves of garlic in a wok until softened.
Add the squid, prawns, fish
Once cooked, add the white wine and saffron and bring to boil
Then add the fresh mussels.
Once the mussels are cooked, add the tagliatelle and a 285 ml carton of double cream.
Season to taste.
Simmer for a few minutes then sprinkle with fennel tops, parsley or dill.

Very tasty dish and cooking time only about 15 or 20 mins.
If you are cooking for 2, just use half a glass of wine and half the carton of cream, otherwise it will be a bit too runny.

It's easy if you've got a electric rice-cooker --- just wash the rice, add the right amount of water (or liquid in the form of stock, etc), add some thinly sliced meat (pork, chicken or beef marinated first with a little soya sauce, a tiny pinch of salt, a little sugar, a little rice wine, a little cornstarch) and frozen mixed vegetables of your choice. Turn it on and you can forget about it until it is cooked. Isn't this easy? An easy recipe to have when you are too tired to cook but want something homecooked and nutritious.

Well when ever I get that feeling I always look in shops, they always have something you can make in 2 seconds like Uncle Bens...

This is howyou cook rice. First you get the rice and 'wash' away dust and dirt a few times. Then for every cup of rice your thinking of cooking (water cup) you add in 1and a half cup of water... So you add in the water, you wait for it to boil, and then put the washed rice in and stir. When all the water has gone turn off the heat and put the lid of pan on top and wait a few moments, if your going to have the rice plain and not with any Uncle Bens they put a bit of butter in and mix it up.

Hope that helps with any Uncle Bens etc... if you get something like Dolmio and want to cook pasta all you do is get a big pan and fill it with water, once it boils put in a bit of salt and put the pasta in...

It should say how to cook the bottle of whatever you get


(sorry if I sound patronizing, but there are a few people who dont know how to cook rice and spaghetti)

Make some Italian Style Beans and Greens(easy to make). Serve over Angel Hair Pasta with freshly grated Parmesan cheese.and Italian bread.Try a good Red Wine. Make this in less than 30 min.and Enjoy.

Spano Kopita is different and nice. Layers of filo pastry with spinach onion and feta cheese and lots of butter. Line dish with filo, then spread with seasoned cooked spinach (which has the water rung out of it) mixed with the onions, feta and you can put pine nuts in and then cover with buttered layers of filo. Bake for around 35 mins or until golden brown.
OR
Kleftiko. Knuckles of lamb (from farm shop, cheap) fried in deep non-stick pan until golden on outside then add onions until transparent then add root veg and anything else you fancy (that won't go too mushy) add stock and simmer gently for about 1hr then add sultanas and dried apricots and simmer for a further 15 mins, season and add herbs (any). Once cold take all the nice meat from the knuckles and put back into the pan. Serve the next evening with minted cous cous.

Grilled Bread with Serrano Ham, Manchego, and Olives:

This simple dish shines when you use the ripest tomatoes you can find.

Dash of salt
2 garlic cloves
3 tablespoons extravirgin olive oil
8 (1/2-inch-thick) slices Italian or French bread
6 medium tomatoes, halved
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/2 cup (about 2 ounces) very thin slices serrano ham or prosciutto
1/2 cup (2 ounces) shaved Manchego cheese
1/2 cup chopped pitted green olives

Prepare grill.

Mash dash of salt and garlic with a mortar and pestle or the back of a spoon to make a fine paste. Combine garlic mixture and oil in a small bowl.

Place bread on grill rack; grill 1 minute on each side or until golden brown.

Rub both sides of toasted bread slices with cut sides of tomatoes, squeezing slightly to leave pulp, seeds, and juice on bread. Discard tomato peels. Spread garlic mixture over bread slices; sprinkle with 1/4 teaspoon salt and pepper. Cut each slice diagonally in half. Arrange ham and cheese over bread pieces, and sprinkle with olives. Serve immediately.

Yield: 8 servings (serving size: 2 pieces)

Pick up some fresh lemon sole or Dover sole, one piece per eater.
To prepare these, marinade the pieces in freshly squeezed lemon juice.
Place the pieces on baking tin. Sprinkle salt and pepper on the fish, and bake at 150 degrees Celsius for 15 minutes.

On the side:
Mix Rocket (Urugula) leaves with fresh Basil leaves in a decent sized bowl. Half up some cherry tomatoes (about a cup of them) and mix in with the leaves. If you like, add in pearl mozzarella balls.
Season with salt and pepper, juice of one lime and 3 table spoons of olive oil.

For carbs:
Put a mug and a half of dry cous cous in bowl, add 3 cups of boiled water and mix in a Knorr chicken soup stock cube until completely melted. Cover dish with a plate, and leave to stand for roughly 20 mins.

For dessert:
Chop some bananas and kiwis (1 kiwi and half a banana per person), and distribute evenly into small bowls. Prepare sufficient amount of jello, and top the bowls until fruit are completely submerged. Stick in the fridge for a couple of hours until the jello sets.
If you want to stick to a low cal dinner, you can actually buy low cal/low sugar instant jello.

Note – prepare the dessert first. It takes longest to set.

Take fat pork chops.... Mix 1 cup of Coke and 1 cup of Ketchup. Marinate Pork Chops in this for 1 hour. Pour remaining mixture over Pork Chops and sprinkle lightly with brown sugar. Bake for 1 hours at 375. Easy and good
