#1, if you overcook your hard boiled eggs...you will have problems removing the shells no matter how old or new the egg is.
#2, salt the water.
#3, the best way I have found is immediately after the eggs are ready to remove from the boiling water, place them in an ice bath. (a bowl filled with ice cubes and some cold water) Leave in for about 10 minutes, then crack the egg and run it over cold water while peeling.
Poof - the shells will come right off!

Boil it for at least 12 minutes- that's 4 minutes more than usual. Take it from the pot and immediately douse with cold water from your tap. As the eggshell cools, crack it at the top and bottom and peel away. The egg will be hot inside so make sure you keep it under running water as you peel. If you do it this way, you won't get any chunks off.

I used to peel up to 3 doz eggs a day - Don't let eggs go cold, nice and warm is best and just crack shells gently don't belt the bjesus out of them

well to peel off the skin of a boiled egg you need to:
take the egg.
gently drop it on a table surface.
place your palm on the cracked egg and rolled it softly and gently till you can see the shell are breaking in half...
then you just separate the shell and voila! your egg is good

My fool proof strategy: roll the egg around on the counter and crack the whole shell, then under running water start at the bottom where the air bubble is. It'll come out great!

After boiling - run cold water on them, then put them into the refrigerator. If you are making deviled eggs - after they are completely cold - take a knife and cut them in half - scoop the half out with a teaspoon - yea - it does work.

i used to get that problem too. do you keep your eggs in the fridge? if yes, u need to "de-cool" the eggs before boiling them. basically, the eggs should be in room temperature before you start boiling it.
then, once you are done boiling it, wait for it to completely cool before starting to peel it. it you want to get the eggs peeled off faster, run the boiled eggs in cool water before starting to peel them.

crack the shell on side of sink and roll it until the cracks are all over it . put under running water ,.There is a thin film between the shell and the egg. Pull it off with your thumb. It comes off all in one peice.
