Baked Tilapia And Fresh Spinach

Serve this easy and tasty baked tilapia dish with a rice pilaf or baked potatoes.
INGREDIENTS:
4 to 6 tilapia filets
cooking spray
8 to 12 ounces baby spinach, cleaned
1/4 cup chicken broth
1/4 teaspoon onion powder
salt and pepper
Creole seasoning blend
1 small tomato, chopped
4 green onions, thinly sliced
PREPARATION:
Spray a 9x13-inch baking dish with cooking spray and add the spinach. If necessary to make the spinach fit it into the baking dish, steam or saute the spinach for a minute or two to wilt slightly.
Sprinkle spinach with salt and pepper and onion powder; add the chicken broth.

Sprinkle tilapia filets lightly with salt, pepper, and Creole seasonings. Arrange the filets over the spinach and sprinkle with chopped tomato and sliced green onion. Cover the baking dish with foil and bake at 350° for 25 minutes, or until fish flakes easily with a fork.
Serves 4.

Broiled Tilapia with Sweet Potato Crust & Vanilla Cream Sauce

Two 6 ounce tilapia fillets, seasoned

Filling

3 sweet potatoes, cooked and peeled (14 ounces after cooking)
3 teaspoons fresh lemon juice
4 teaspoons fresh orange juice
1 tablespoon unsalted butter
1 teaspoon salt
1/2 teaspoon minced ginger

Crust

3 graham crackers
1 cup roasted pecans
2 tablespoons melted butter
Sauce

5 tablespoons heavy cream
1 tablespoon pure vanilla extract
2 tablespoons fish stock, crab or shrimp stock, or water
Pinch of seafood seasoning or Creole seasoning
Grind the sweet potatoes, juices, butter, salt and ginger together and set aside.
Grind the graham crackers, pecans and butter together.
Cover the fish with the sweet potato mixture, then sprinkle the pecan mixture over the sweet potato mixture.
Broil the fillets until golden brown, approximately 4 minutes.
In a 6 inch skillet, add the cream, vanilla, seafood stock (or water) and seasoning. Bring to a boil and cook for 45 seconds, until the alcohol in the vanilla is gone and the sauce coats the back of a spoon.
Pool the sauce on a plate, place the broiled fish fillet on top and serve.
Serves 2

Asia Tilapia In Foil

4 (6 ounce) tilapia fillets
1/4 cup soy sauce
2 tablespoons toasted sesame oil
1 tablespoon minced fresh gingerroot
1 bunch green onions, chopped
1/4 teaspoon pepper


Preheat oven to 425* F. Wash fillets and pat dry. Tuck thin ends under so the whole fillets will be of equal thickness.
Place each fillet on 12x15” pieces of foil.
Combine soy sauce, sesame oil, ginger, and pepper and spoon over fillets. Sprinkle scallions on top of each fillet. Fold the foil over fish and crimp edges to seal.
Place packets on baking sheet in a single layer.
Bake at 425* F for 10 to 12 minutes, until foil is puffed and fish flakes easily when tested with a fork.

Garden Tilapia Recipe

4 tilapia fillets
1 teaspoon Old Bay Seasoning
1 teaspoon garlic powder
1 onion, sliced
4 cups spinach leaves
10 baby carrots
1/8 cup green onions, chopped
1/8 cup green peppers, diced
1 zucchini, sliced
1 teaspoon dried dill weed
1 tablespoon margarine
1 yam, sliced in 1/4 inch slices, pre-cooked
salt and pepper

Line a jelly roll pan with foil. Spray with cooking spray.
Place filets on foil covered pan and sprinkle with Old Bay seasoning, and garlic powder.
Lay onion slices, sliced zucchinni, sliced yam, spinach, baby carrots, green onions, green peppers, and any other veggies you may like, over the filets.
Sprinkle with dill weed. Divide the margarine into quarters and place the dots randomly over the dish.
Cover tightly with foil.
Bake at 350 degrees for approximately 30 minutes. You can start checking at 20 minutes. The fish is done when it flakes.
Note: to precook the yam, I threw it in the microwave for 8 minutes or so. When it was cooked thoroughly, I allowed it to cool enough to handle and then placed on the spinach.

This is what I do. I love this with a salad, steamed veggies or served with rice. Cover Tilapia fillets in Rice Flour Dip in scrambled eggs cover with Panko Bread crumbs, set aside. Place 1 cup sugar in a pot and melt. When amber colored, take off heat and add 1 cup balsamic vinegar. The sugar will harden up, but keep over heat until sugar melts again. Reduce until about half. Fry/grill fillets until golden and fish is cooked through. Drizzle balsamic reduction over fish and serve. This is really delicious. I get a lot of requests to cook this.

If u freeze it in an airtight zip lock, you can freeze it for more than a long long time - but for health reasons maybe you shouldnt leave it in freezer for more than a month. I like tilapia fried - with ground masala of ginger, green chilles, dry roasted chilli powder, tumeric powder, shallots and pepper. Smear this masala onto the fish and leave for about an hour, then rub off excess masala and shallow fry in hot oil. Yummy!!!

Tilapia as with most fish are freezable for long periods of time as long as you extract most of your oxygen from the freezer bag.Doubleing freezer bags works well also.Heres a quick easy way to prepare your fish,any fish: Lightly flour and egg your thawed fillet,brown both sides in hot x-virgin olive oil,remove fish and discard oil,add white wine lemon butter snp and chicken stock reduce add fish and serve

not sure how long, but i heard on the cooking chanel that if you freeze them in water it prevents freezer burn and prolongs the freshness.
