I use this recipe about 2x per month:

fill bottom of crockpot with 2" water. Add chicken broth. Add your preferred items (I use the following)

-->1 bag of sliced carrots
(Idon't want to waste time cutting them, LOL)
--> 1 container fresh mushrooms, washed with stem pulled out
(cut in quarters)
--> 4 or 5 red potatoes, cut in small 1" cubes
--> 2 onions, quartered
--> 4 cloves of garlic (use more if you REALLY love garlic)
--> dash or two of thyme and sage
--> pepper and salt

cook on high for 15 minutes.
turn the controls to low and cook for 7-8 hours.
Poof - you are done!
Be careful...the chicken is so tender that the bones also soften up. You don't want to accidently choke on a tiny bone, so it's probably wise to debone the chicken before serving.
ENJOY!

Well I don't know about a crock pot, but I know you can season it up however you want and put it in a roasting pan. Bake it at 350 degrees for about 1 1/2 hours. Once it's done, everything should come off easily.

You can add anything you want to whole chicken and put it in the crockpot it will break apart so nice... Try honey and lemon with a little water. BBQ Sauce with a little water... not to much water though, the chicken juices fill the crock pot up quickly. Mmmm have fun!

stick it in the crock pot, add 1 cup water, 1 tablespoon herbs de provence, 1 tablespoon (more or less) salt and turn on for most of the day. You are going to have to touch all the yucky stuff at some point but wait until it cools down - like tomorrow morning if you are going to do this today.
