You Can Either Dip In Eggs Then In Flour And Salt, Or Just In Flour And Salt And Fry In Hot Oil More Like Saute Actually. And You Know The Best Thing Is To Shake Chopped Green Tomatoes And Chopped Okra In Flour and Salt and Deep Fry In Oil. OMIGOD So So Good, You Gotta Try. It's A Southern Thing!

Ingredients
- 4 green tomatoes, thickly sliced
- 1/2 cup all purpose flour
- 1/4 cup yellow cornmeal
- 1 egg
- 1/3 cup milk
Salt and pepper, to taste
Oil, for frying---canola or peanut oil is best
Mix flour, corn meal, salt and pepper in a small bowl. In a separate bowl, beat egg and milk until combined.
Over medium heat, add enough oil to cover bottom of frying pan by about 1/4" inch. Dip sliced tomato into egg mixture covering both sides. Dip sliced tomato into flour mixture covering both sides.
Place prepared tomato into preheated frying pan. Cook each side of the tomato until golden brown and crusty....YUMMY!

3 or 4 large, firm green tomatoes
Salt
2 cups self-rising flour or cornmeal (I like flour better)
1-2 teaspoons pepper
vegetable oil for frying
Slice tomatoes to desired thickness (I like them thin). Lay out on a pan and sprinkle with salt. Place in a colander and allow time for salt to pull the water out of tomatoes. Mix flour with pepper. Coat tomatoes with flour mixture and deep-fry until golden brown. YUM!

It's an old southern dish. I think Emerill, or Paula Deen would have one in their published cookbooks. Paula especially because she's southern.
I would THINK it would be
mix a standard batter, butter, eggs, flour, with seasoning, then dip the sliced tomatoes in the batter, then fry the sliced tomatoes for about 10 minutes. Salt when you take them out of the fryer. then eat. good luck. I hear they really don't taste that good.

Slice the tomatoes. dip in egg (or egg and milk) mixture, add salt, pepper and dash of garlic salt to flour, cover bottom of frying pan with oil, dip tomatoes in egg, then the flour mixture and brown on both sides.. yum :)
You can do the same with eggplant.
