In comparing nutrition labels on loaves of bread, I've run into a quandry: Bread A has 5 grams of fiber per serving, but the first ingredient is enriched white flour. Bread B has only 3 grams of fiber per serving, but is made with 100% whole wheat. Which is healthier? More fiber but not whole grain or whole grain with slightly less fiber?

Bread B is healthier. Whole wheat is the best bread and 3 grams of fiber is really good. Enriched white flour has been chemically screwed with and all if any nutrients are destroyed. Whole wheat however, seems healthier because it is a natural grain.

Be careful because whole wheat is not the same as whole grain. Whole wheat is white flour plus wheat bran. That gives bread A the slight advantage because it has more fibre.
Look for something that says whole GRAIN. If it's whole grain, the label will usually say so and it will be quite a bit more expensive. And have more fibre and fat and calories, but that's ok. It's good fat and good calories. It also tastes better.

Sprouted grain bread is your best choice by far. You can find this in any health food store, and many regular grocery stores now carry it (it may be in the frozen section).

Why sprouted grain bread? Sprouting radically changes grains and boosts nutrition significantly. Sprouting a grain like wheat practically turns it into a vegetable (think of what a sprout looks like--it has a nice green veggie top).

Alvarado Street Bakery makes some GREAT sprouted grain breads that contain no flour, only sprouted grains. You can choose from flavors like sourdough, rye, and multigrain/seed/nut.

If you're looking to lose (or maintain) your weight, though, keep your consumption of grains--even sprouted grains--to a minimum. Most people do best on a low grain (and lower carb) diet.

Whole grain beats enriched white flour hands down every time. Enriched white flour is nutritionally worthless and is high on the glycemic index, which means whenever you eat it you get an insulin spike that makes your body start storing any calories you don't need right away as fat. Whole grains are low glycemic-index foods and take more energy to digest, so the net effect is that you actually burn more calories by doing nothing more than digesting your food. Cool, huh?

white bread is the devil no matter what the label says--go for the whole grains--1 sandwich would have 6 grams of fiber--

Bread B because enriched flour is not as healthy. Whole wheat is always the better choice anyways.
