I have 3 water dishes in their room. Every day this week, one has had ONLY yellow Zupreem pellets, another ONLY purple Zupreem pellets, and the last ONLY red Zupreem pellets.

They don't do this with any other brand of food (I alternate).

I know other parrots do this (ya, and this is a stupid fun question :-) . How does your bird dye or mess up its water?

Well now we know that your bird knows the differences in color! Birds have excellent color recognition...I find it interesting that he is separating them out from bowl to bowl.
It's fascinating behavior and I think you could probably train a color-recognition trick based on the evidence you've presented here.

My Grey actually plays in his water bowl occasionally. He'll actually get in and mess around, and "attack" the water and splash in it. He also sticks a foot in and swirls the water around.
He will also mess with his water bottle by putting a toe in the spout and letting the water dribble out.
This is all natural play behavior and if they have fun, that's terrific! Just change the water. And they'll start all over again!

My lovebirds did the same thing until I switched their food to Zupreem natural. It wasn't an issue, but I was advised by several sources not to feed my Eclectus colored pellets, so out of habit I now buy only natural zupreem for all my birds.

My tiel is boring to watch but the sun counure will give you something to watch. He will get in the big water bowl and make a big mess and look like a wet rat with a beak by the time he is done the whole cage is wet. I had to put in a larger water bowl because he would unhook the smaller one and pour it over him and then sling it around and let go to see how much noise it would make. He takes seeds and dips them in the water in the smaller water bown in the bottom of the cage and eates them and goes back to the top and gets a green or red pellet depending on how he feels and goes back down and dips it. If he don't like it he will carry it to the edge of the cage and give it a good fling to see how far he can pitch it into the room.

So they are just playing and having fun. One water bowl for a bath and the other for drinking and diping food in . Smart if you ask me.

My umbrella cockatoo likes to throw anything and everything he can into his water. We give him a variety of fruits, pellet, and seed, occasionally a hard nut, and he has a ton of wooden toys ranging from pine to bottle brush. He will break off pieces of food/wood and throw it into the water. By mid day, his drinking water looks like the bottom of a green swamp. It's yummy and makes me want to drink some.
Then, my blue and gold macaw, he is a great eater and he actually never puts anything into the water dish. It is as clean at the end of the night as it was when he first got it.

Usually the same, I'll always find his carrots, pellets, seeds, poop in the water. Not sure if she's doing it on purpose, or it just gets dropped in the water.

My cockatiel does this but she changes the colors in her single water dish. Sounds like you got a smart birdie there. I bet she will love easter time!!!! She can help the kiddos color eggs! Just kidding, that is really neat though!
