That is what the religious book is for. Whether you believe in the Bible, the Qu'ran, the Talmud, the Amida Buddha, the Theomachy even or any other of the religious books out there; they are there to show us how God thinks.
Jehovah is a patient God but can only be pushed so far before He feels the need to "correct" the Israelites.
Jesus is a wise and understanding teacher who wants all to come to him in repentance so that we can all be with him.
Allah is similar to Jehovah in patience but feeling the need to correct his followers if they go too far away and don't return to him.
The Amida Buddha refers to gods as one possible life our souls may take on their journeys to Nirvana (state of lack of want) but not a permanent situation.
The Theomachy refers to Zeus as a womanizer with a short temper but in the end is a caring individual who just happens to have weaknesses himself.
And there are tons more "myths" for any one of those Gods or thousands more throughout the world, all of which give stories and examples of the kind of personality God has (at least in their mind, and I believe at least one has the true God in mind and how He acts and why) and by reading the one by God (inspired by God) we can see how God really is and what his personality is like.

The only way your going to get that information is to read His word in the bible. Study the word of God yourself and find out first hand how God thinks.
2 Timothy 2:15 Study to shew thyself approved unto God, a workman that needeth not to be ashamed, rightly dividing the word of truth.

Einstein said that he wanted to know the thoughts of God. Fortunately God does make his thoughts and mind available to us.
The easiest way is to ask Him for wisdom. But this comes with a warning.
"Whoever is simple (easily led astray and wavering), let him turn in here! As for him who lacks understanding, [God's] Wisdom says to him," (Proverbs 9:4 (Amplified Bible))
"If any of you lacks wisdom, he should ask God, who gives generously to all without finding fault, and it will be given to him. But when he asks, he must believe and not doubt, because he who doubts is like a wave of the sea, blown and tossed by the wind." (James 1:4-6 (New International Version))
See, there is the catch. If one wants to know the mind or thoughts of God they are available, but first the seeker must believe that God is and that God will answer. Since God sees our heart, there is no possibility of faking God out.

Chuff me, you don't want much for your money, do you? However, as it's a quiet day and tea is cooking I'll tell you - God thinks "Hmmm...that lawn needs cutting...I wonder if the kettle's boiled yet...blimey, is that a grey hair? Oh bugger, the humans are fighting over something stupid again...oh well, leave 'em to it until they know better..." and so on and so on. And how do I know what God thinks? Easy! I'm a chuffing genius! Ta ta!

He doesn't need to think, if by God you mean the absolute, the creator of all the universes, the source of all being. God is omniscient, and therefore knows everything already.

I do not know how God thinks but I do know that he loves. You're absolutely right about the second question - anyone who announces that they know everything about God is silly and delusional. He is much more than we can even imagine.

We cannot wrap our finite minds around the infinite God.
Why would you expect created beings to be able to explain their Creator? Isn't that sort of like asking a frog to explain Friday?
All we need to know about God we learn from Jesus...and He thinks we all ought to love one another.
Just think how the world would change, if we all really did love one another......

We cannot know how God think, only He is All-Knowing. We only know what He has told us through prophets starting from Adam.
