i bought a bussuel of leaks to day and i want to know if any one has any good simple recipes for preparing leaks... and or what do you eat with them??

Mmmm...love leeks....

Here's my favorite thing to do with them. Sorry no measurements, I always just cook to taste.

Cut the top green part and the root off the leeks, so you are left with white and pale green. They slice them lengthwise and clean well. There will be a lot of dirt stuck between the layers down towards the root. Once they are clean and dry roughly chop and set aside.

Sautee chicken breasts in a little olive oil till they are just cooked. Set aside and cover with foil to keep warm.

In the same pan add a bit more oil and toss in the leeks and a healthy pinch of salt. Cook them down till they soft and add some crushed garlic and thyme (fresh or dried). Continue cooking till the leeks just begin to caramelize. Then add chicken stock and white wine to the pan and reduce by about half. Reduce heat to low and add a touch of heavy cream or half and half to the pan. Add the chicken back in and leave it for a few minutes to warm up and soak up some of the flavor, being careful not to let the sauce boil, or the cream will curdle.

I like to serve over rice or egg noodles.

Leek are very versatile, I like to throw them into stew or pot roast as well instead of onions.

May I inquire as to WHY you would buy a bushel of anything if you don't know what to do with it?

Just make sure you cut them completely down the middle, and wash the sand out of each layer before doing whatever you're going to do with them.

I suggest a rather large pot of potato leek soup. You could feed the homeless?

Make leek-potato soup! I can't really give you the recipe because I always mish-mash it with other recipes. But try looking that up on epicurious.com. Very yummy and comforting, especially with some crusty bread and olive oil.

Laripin' Leek Soup

4 cups chopped leeks
4 cups diced potatoes
6 cups chicken broth
4 slices bacon
cook till done
add 1 cup whipping cream
or half and half
salt pepper
one stick butter
Just till Hot again
good good good! Enjoy!

leak soup.......... can make this with chicken or beef or even pork..... each taste good an are different...... can make the leak soup base an freeze it too.. i lov makin soups in da winter when it cold out..
