I want to be able to make it myself not buy it!

Ive tried this recipe and it is simple to carry out as well as being really tasty
Ingredients
½ onion, chopped
2 tbsp olive oil
4 slices bacon, chopped
150ml/5fl oz double cream
2 eggs
handful basil, chopped
140g/5oz spaghetti



Method
1. Soften the onions in a pan with the oil for two minutes.
2. Add the garlic and bacon and fry for another 3-4 minutes.
3. Add the cream to the pan and then the eggs.
4. Cook the spaghetti according to the packet instructions and drain.
5. Add the spaghetti to the pan with the sauce and stir through to coat the pasta.
6. Stir in the basil and serve.

Pasta Carbonara

8 ounces mushrooms with stems -- sliced 1/4"
6 tablespoons finely-minced shallots
1/4 cup rendered bacon drippings or olive oil
24 slices thick bacon -- cooked, and
sliced 1/2" strips
2 pounds spaghetti -- cooked
2 teaspoons finely-chopped parsley
3 grinds of black pepper
Salt -- to taste
4 tablespoons grated Parmesan

Light Bechamel Sauce

6 tablespoons butter or margarine
6 tablespoons all-purpose flour
3 cups whole milk

Add the reserved bacon drippings or the olive oil to a heavy skillet over
medium heat until fragrant, then add the mushrooms and shallots and saute until they are golden, but not brown. Add the bacon strips, stir well and
turn off the heat.

Add the warm spaghetti and blend all ingredients together thoroughly. Add
the warm bechamel sauce, pepper, parsley and salt and blend thoroughly.
Serve immediately with Parmesan.

Sauce: In a heavy non-aluminum pot, melt butter and add flour and cook on
moderate heat for 2 minutes, stirring constantly with a wire whisk. Do
not allow the roux to color more than blond. Add milk (no skim or
low-fat) and bring to just below the boiling point. Remove from heat
immediately and keep warm (180 degrees).

This recipe yields 4 servings.

(340 g) packages pasta, of your choice.
5 tablespoons of ican't believe it not butter margarine
1 head garlic (crushed thoroughly)
3 cans button mushrooms
1 whole rotisserie chicken (deboned and cut into cubes)
2 packages of thin sliced ham (cut into cubes)
6 (400 ml) cans cream of mushroom soup
4 (400 ml) bottles cheddar cheese spread


1. Boil you favorite pasta and set aside.
2. Place a pan on medium heat stove, melt the butter.
3. Add chicken and ham and stir fry.
4. Add mushrooms and let it simmer for 5-8 mins, stirring occassionally.
5. Add cream of mushrooms and cheese spread, mix it well and let it simmer for 10-15 mins, stirring occassionally.
6. Place your pasta on your favorite pasta tray, top it with your sauce and serve.
7. Enjoy and savor the flavor!

My mother makes it awesome and I wish I could be more help to you...but I don't have it handy. I do recall her using Italian bacon, spaghetti noodles...whatever cream sauce it was I believe butter was involved...I know, I know, not much help, but darnit...I tried! Now I'm hungry!

Don't forget the egg at the end... It IS what makes it creamy.

make it with egg yolks...

3 large egg yolks, dash of cream, lots of black pepper, lots of parmesan cheese... mix it all together with some pancetta or parma ham and add to freshly cooked spaghetti
