It's for a dinner party in about 3 hours and should be enough to feed 7 people.

Ingredients:
2 tablespoons olive oil
2 cups coarsely chopped onions
6 cups vegetable broth or water
1 1/2 cup brown lentils
1/3 cup coarse bulgur
1/4 teaspoon crushed red pepper flakes
1 clove garlic -- pressed
3 cups finely diced plum tomatoes -- seeded
1 1/2 teaspoon dried mint mint
1 1/4 teaspoon salt
1 cup minced fresh parsley
1 tablespoon fresh lemon juice

Directions:

Over medium-high heat, heat 1 tablespoon of oil in cooker. Cook onions, stirring frequently, for 2 minutes. Add broth and stir well to scrape up any browned bits sticking to the bottom of cooker. Add lentils, bulgur, and red pepper flakes.

Lock lid in place. Over high heat, bring to high pressure. Lower heat just enough to maintain high pressure and cook for 10 minutes. Quick-release pressure. Remove lid, tilting it away from you to allow any excess steam to escape.

Stir in garlic, tomatoes, additional tablespoon of olive oil, mint, and salt. Simmer until garlic looses its raw taste, about 2 minutes. At this point, add a bit more mint if you feel it's needed. Blend in parsley and lemon juice. Taste and add more parsley and lemon juice if desired. Serve in large soup bowls.

What do you need a proper recipe for, it a soup make something up. If it was me i'd roast the butternut with a couple of quartered onions in a hot oven for 20 to 30 minutes (until there is some colour). The mix in a large saucepan with the lentils and chicken stock. Maybe add some ground pepper or even cumin might go well. Then simmer for 30 to 40 mins until the lentils are soft. Then put through a blender.

Soak the lentils and follow the instuctions on the pack
peel the squash and chop into large chunks.
Peel and chop 2 large onions
chop one celery Gently fry all in butter till soft.
Add 1 Knorr Vege cube and top with water bring to the boil then turn down and simmer for 30 mins.
blitz the mix using a hand blender untill a smooth soup is formed.
add lentils just before serving and a touch of cream.

Dice 3 large red onions, 2 large carrots,3 sticks celery, and 1 squash.Sweat on low heat for 15 mins. Add 2 cups red lentils and 2 pints of veg stock. Marigold stock is good.Gently simmer,not rolling boil, until lentils cooked. Usually 35 mins.Blend until smooth, adding more stock if too thick. You can add chilli at the sweating stage if liked. Check for seasoning. Serve with garlic coutons. Bake them in the oven in either olive oil or butter, saves fannying about.

MIDWEST LENTIL SOUP

1 tbsp. salad oil
2 lbs. boneless chicken breasts, skinned
1 med. onion, chopped
3/4 c. dried lentils, rinsed
1 can (about 14 oz.) chicken broth
3 c. water
2 lg. tomatoes, seeded, diced
1 squash, diced
2 carrots, pared, thinly sliced
1 green pepper, diced
1/2 tsp. dried basil leaves

In 5 quart Dutch oven, heat oil over medium heat. Add chicken and onion; saute 5 minutes until browned. Add lentils, broth and the water. Bring to boiling, simmer covered, 20 minutes. Add remaining ingredients. Bring to boiling, simmer covered, 10 minutes or until vegetables are tender. Remove chicken; julienne. Stir into soup.

Lightly fry an onion, one apple and a butternut squash (chopped)in a saucepan with about 15 ml oil. Add crushed garlic and a teaspoon of curry powder.
Fry for about 10 - 15 min add 500 ml stock (chicken or veg) and 250 milk. Cook but dont boil until squash is soft. Take of heat liquidise and add 150ml single cream. Salt and pepper to taste.

Cut the squash in half. put butter and spice it up with curry. microwave. It is soo good. take out the seeds and all u know prep it 1st. very fast and good for u. as for the soup not sure other than just Salt Water and seasoning. maybe some pretty green parsley. check out a recipe web site. Ive got one down load and it is expired now so I'm sorry about that 1.

no, besides the fact that it fairly does not impression the flavor. the only thank you to make it green may well be to function nutrition coloring and that must be variety of stupid. i might decide for the creamier soup.
