The Carrot is the healthiest vegetable of all. They are not affected by any known diseases. They never catch colds or flu, and are indestructible. This is why there is an extreme Carrot over population problem in our country. You can actually go to any field and pull up a carrot without the need of a state or federal license. Eat as many as possible. Raw or cooked is fine. And , unlike the stories of hearing a Lobster scream when you first start to boil it in hot water, there is none of that with a Carrot. They have no mouth to scream from, and their nervous system feels no pain. So, go ahead and chomp away on those carrots. Oh, .. one other thing, if you plan on having a carrot as a pet, please remember to have that carrot spay or neutered sometime before they are 3 to 4 days old. The last thing you want to see is a carrot in heat. It isn't pretty. Dozens of carrots marching around your home .. wanting some action. Yeppers, there is no healthier vegetable out their than the Carrot .. well , .. not counting the Tomato .. but since there seems to be little agreement on whether a Tomato is actually a vegetable or a fruit .. I wouldn't worry about them. (Actually, a Tomato, oddly enough, is a fruit). So, once again, the simple Carrot wins out again ! Now get out there and catch them carrots !

Swiss chard, kale, spinach and collards rank among the top vegetables for their nutrition boosters. Vitamin K and carotenoids run rampant - and do you a world of good. In addition, they contain impressive amounts of calcium, iron, potassium and vitamin C. Brussels sprouts and broccoli are in the same ballpark.

Top of the list for me would have to be sweet potato. Ounce for ounce it has more fiber, more potassium and more nutrients than anyother tuber, or vegetable for that matter.
Next would be soybean, in any form, I like the thick tofu myself it lends itself to many dishes. Has tons of antioxidants and lots of various vitamins.
Then broccoli, asparagus and artichokes all lend themselves to a healthy diet.
