Alright, lets clear something up right away. Hebrew uses a different alphabet than English and romantic languages, so its not surprising that it doesn't have a J. However, When we write such things like Jew, we are writing it in English and more likely than not, Phonetically, not in Hebrew. So your weird spelling makes no sense.
Second, Judaism isn't a dead religion, and I'm sure you know that. Its not as popular as Christianity, but few if any religions are at this point in time. If the symbol of the cross was any generic Jewish person, then the idea that it was trying to say something about Judaism would make sense. As it is, Its the specific person that matters. When Jesus died, he wasn't planning on creating a new religion. He was doing it for the Jews of the time. Now, obviously this didn't work out as one would hope, because the fractured, some becoming believers and others staying where they were. I'm not christian myself, But I would hazard a guess that the Jesus hanging on the Cross became a symbol for Christianity for two reasons; it was the defining moment that truly began their religion, and because it shows the sacrifice he made to free them from their sins. It has nothing to do with Judaism.

In early Christian art, the symbol was a lamb on the cross. Early Christians knew Christ was mystical, not historical.

Ummm... Last I checked, Christians use the empty cross to signify the risen Lord. The Catholics use the cross with Christ on it, because (if I understand it correctly) they don't believe that Christ rose.
