Applesauce Spice Cake
12 Servings

2 Cups All-Purpose Flour
1/4 tsp Ground Cloves
1-1/2 Cups Sugar
1/4 tsp Ground Ginger
1 tsp Baking Powder
1/4 Cup Buttermilk
1 tsp Baking Soda
1/4 Cup Margarine, Softened
1 tsp Ground Cinnamon
1/4 Cup Shortening
1/4 tsp Ground Nutmeg
1/2 tsp Vanilla
3 Eggs
1 Cup Applesauce

Preheat the oven to 350ºF

In a bowl, combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg, cloves, and ginger. Add buttermilk, margarine, shortening, applesauce, and vanilla.

Beat with an electric mixer on low to medium speed until combined. Beat for 2 minutes on high speed. Add eggs and beat for 2 minutes more.

Pour the batter into a greased 13x9x2" baking pan. Bake for 30-35 minute or until a toothpick inserted near the center comes out clean. Cool on a wire rack.

Cream Cheese Frosting

1-1/2 cups light cream cheese
1-1/2 Tablespoons margarine, softened
2 teaspoons sugar
2 teaspoons vanilla
2 Tablespoons 1% milk to thin frosting

Beat together cream cheese and margarine. Then stir in Equal®, and milk until powder is moistened. Beat until smooth and spread on Carrot Cake. Frosts 2 9" round layers of cake or two dozen cupcakes.

Pumpkin Spice Cake

Total Time: 1 hr 5 min
Makes: 24 servings


1 pkg. (2-layer size) yellow cake mix

1 pkg. (4-serving size) JELL-O Vanilla Flavor Instant Pudding & Pie Filling

1 cup mashed cooked fresh pumpkin

1/2 cup oil

3 eggs

1 Tbsp. pumpkin pie spice

PHILADELPHIA® Cream Cheese Frosting

1/2 cup chopped toasted PLANTERS Pecans


PREHEAT oven to 350°F. Place cake mix, dry pudding mix, pumpkin, oil, 1/2 cup water, eggs and spice in large bowl. Beat with electric mixer on low speed just until moistened. Beat on medium speed 4 minutes.

POUR into greased and floured 13x9-inch baking pan.

BAKE 32 to 35 minutes or until toothpick inserted in center comes out clean. Cool cake in pan on wire rack. Spread with PHILADELPHIA® Cream Cheese Frosting; sprinkle with pecans. Store in refrigerator.

ORANGE CARROT CAKE
1 orange
2 c. enriched all-purpose flour
2 c. sugar
2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
2 tsp. nutmeg
1 tsp. salt
1 1/4 c. vegetable oil
4 eggs
2 c. grated carrots (3 medium carrots)
1/2 c. chopped nuts

Trim a thin slice from both ends of orange; cut in half lengthwise. With a shallow V shape, cut out white center. Core. Cut halves into wedges, removing any seeds. Cut into chunks and place in electric blender; puree. Reserve 1 tablespoon puree for use in frosting. Sift flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Add oil and orange puree, mixing well. Add eggs and mix thoroughly. Stir in carrots and nuts. Line two 9 inch cake pans with wax paper. Pour batter into pans and bake at 350 degrees for 1 hour or until cake tester inserted into cake comes out clean. Let cool in pan 10-15 minutes. Remove from pans and cool completely before frosting. Makes 2 layer cake.

ORANGE CARROT CAKE FROSTING:

1 (8 oz.) pkg. cream cheese
1/4 c. butter
1 lb. box powdered sugar
1 tbsp. orange puree

Beat cream cheese and butter until blended. Add powdered sugar and puree; frost cake.

ZUCCHINI CAKE
3 eggs, beaten
1 c. vegetable oil
2 c. sugar
2 tsp. vanilla
2 c. flour
3 tsp. ground cinnamon
2 tsp. soda
1 tsp. salt
1/2 tsp. baking powder
2 c. grated zucchini

ICING FOR CAKE:

1 (8 oz.) cream cheese
1 stick butter
1 1/2 c. 10X sugar
1 tsp. vanilla

Combine eggs, oil, sugar and vanilla; mix well. Combine dry ingredients; add to oil mixture, mixing well. Stir in the grated zucchini.
Pour batter into a greased and floured 10 inch Bundt pan. Bake at 350 degrees for 50-60 minutes. Allow to cool 20 minutes before removing from pan.

Icing: Beat together softened cream cheese, butter and vanilla. Slowly add confectioners' sugar and beat until smooth. Ice cooled cake.

I thought you would like ot try this too, our family loves it. I add pineapple sometimes or shredded apples, I even have folded in blueberries right before baking.
I also do a chococlate one here it goes.

CHOCOLATE ZUCCHINI CAKE
1/2 c. shortening
1 3/4 c. sugar
1 tsp. vanilla
2 1/2 c. flour
1 tsp. soda
1/2 tsp. cinnamon
1/2 tsp. salt
1/4 c. chocolate chips
1/2 c. walnuts
1/2 c. oil
2 eggs
1/2 c. sour milk
4 tbsp. cocoa
1/2 tsp. baking powder
1/2 tsp. cloves
2 c. zucchini, chopped, peeled

Sprinkle on top 1/2 cup chocolate chips, 1/2 cup walnuts. Grease 9 x 13 inch pan. Bake 40 to 45 minutes. This is moist cake, no frosting needed, good with whip cream.
This is a very good cake!
