If you want any meat in it, boil it first til almost done, then add potatoes, and peas or beans cause they take a little longer to cook. When they are almost done, add your corn, toamtoes and any other veg you want in it. Just keep it stirred to make sure it is not sticking to bottom of pot.....season to taste and let it simmer til all is done and flavors combine........enjoy!!!

Sautee some onions in a little oil till opaque. Add a couple of cloves of garlic then add all your veggies. Start with the veggies that will take longer to cook & then add the others. All your veggies should be about the same size. Cook them down a little & add a few cups of vegetable stock you can purchase at any grocer. Bring to a boil reduce heat & cover. Let simmer for a half an hour. A small handfull of rice is nice to add before the boil.
When we have leftover veggies we just put them in a zip lock bag & stick it in the freezer. When we get a good supply we make soup. Peas, carrots, beans, corn almost anything. You can even add meat but please brown it with the onions first & don't cook it all the way through. Remove the meat while you cook the veggies. After turning the heat down to simmer add the meat back.

ALMOST HOMEMADE SOUP - VEGETABLE

2 cans chicken broth (remove fat)
2 c. water
1 pkg. Knorr vegetable soup mix
1 med.-lg. onion, chopped
3-4 stalks celery, chopped
3 carrots, sliced
2 sm. potatoes, cubed OR cooked rice OR cooked pasta
Vegetables

(Whatever other vegetables cooked or not that you want to get rid of - tomatoes, that have gone beyond the salad stage are a good addition).

1 tbsp. parsley flakes
Salt and pepper to taste
1 tsp. thyme
2-3 bay leaves

In a large heavy pot combine the broth, water and dry soup and celery. Partially cook the carrots and potatoes in small amount of water; when tender add to the soup - including water. Saute the onion and add to the soup. Add remaining ingredients. Cut the leftover vegetables small and add to soup. Add more water or broth if needed. Simmer for 40 minutes to 1 hour.

Any veg you have put in a pan, cover this water and cook until soft. Mash lightly then add a tin of corned beef stir and cook for a few minutes the taste is wonderful. You can also add some small pasta to this as they do on the Maltese Islands

Well, not knowing what vegetables you have-a minstrone would be good. You need some kind of soup base-I use chicken or beef. its like bouillion only it comes in a tub and you add 1 tsp per 8 oz of water. then bring it to a simmer and add diced onion, diced carrots, tomatoes, diced celery, ground beef (cooked) left over ham, whatever you have. Some seasonings-salt, pepper, cumin or italian herbs. Simmer for 1/2 hour or more-until vegies are tender. If I could recommend a sight, it would be www.foodnetwork.com. I do one to use my veg.
Boiling water around 2 pints
4-6 Veg stock cubes(dissolve in water)
they par boil some potatoes and carrots
Add all the veg to the stock then add potatoes and carrots
blend together with handblender.

saute onion and garlic add your chopped veg and water with a organic veg bouillion powder( available from most supermarkets or health shop. I suggest you dont use a stock cube because of the crap additives and flavour enhancers. it seems a shame to spoil a healthy meal,)

then you can add allittle passata if you like or some blended tined tomatoes., or neither.............. Its personal choice.

to bulk it up you can add pasta or tined cooked lentils
serve with crusty fresh bread.

root veg such as carrots and swede are good. Leeks are too as well as butter nut squash.

I'm not sure if you are a vegitarian or not, but if not, try hamburger soup, just brown some hamburger, put in pot with some beef broth or stock and your veggies, let simmer till veggies are tender and enjoy. Can also add those little alphabet pastas, for a beef, veggie alphabet soup.

Get some chicken base soup and follow the directions.
Add all your vegetables and season to taste.

If you want a beef taste, then get some beef bullion cubes, follow directions add vegetables and season to taste.

vegetable stock (most important) chunky chop all your veg,seasoning and simmer until all veg is soft. Add cornflour if you want it a little thicker. Good luck & enjoy
